Butternut Squash Chili
As I walked into the grocery store and added the various on sale produce to my cart, an elderly woman approached me. I don't intentionally avoid contact in the store, but I do often worry about how I may be inconvenient to someone who might say something rude to me. I do check ingredients carefully because of a soy intolerance, and I know that sometimes others' are not patient. I try to move out the way, but sometimes there is no where to move in crowded aisles. To my pleasant surprise, the woman instead asked me what it was that I did with the orange squash in my cart.

A Lament for Meat and Cheese
When I was a teenager, I cut my teeth in a small town in south Mississippi named Purvis and I do mean small. We did not have a Walmart and had only a handful of restaurants of which three were fish houses that were common in the south during my youth in the late 90’s. My parents owned a patch of land that the whole family lived on and during the summer it needed constant attention. I spent hours for days on end on the tractor cutting grass or on the mower doing the same for the many individual yards. I would get up early and work till lunch before having to find something to eat for myself. Both my parents worked some 30 miles away in a nearby, “larger” town and so often I was by myself for lunch. I would get into my truck and if I did not want to drive 60 miles to the big town there and back or into Purvis which was a 30 miles round trip (yes I lived in the middle of nowhere), I really only had one choice of place to eat.

Creamed Rice
When I was younger, I used to eat cream of wheat (hot cereal to some folks) relatively frequently. It’s similar to oatmeal but has a more uniform texture – we would dress it with butter, milk, brown sugar, and salt. Obviously not quite in line with the affinity for clean eating I now possess. However, I was exposed to creamed rice when I was in college and have been making that ever since. It’s easy, doesn’t take much more time, and only involves two or three ingredients that are actually worth ingesting. This is a simple recipe so if anyone has improvements, leave them in a comment for your fellow clean eaters to check out!
