The OG chocolate cake
This is an adapted version of my mom's OG recipe. When I was growing up the original (already vegan) recipe was a quick and easy, foolproof staple in our house. I have experimented with the ingredients over the years and subbed the refined sugar for maple syrup, which aside from making it a little bit healthier also adds a wonderful flavour. It also works well with some gluten free flours, but it depends on the consistency and requires a flour that behaves as closely as possible to a traditional cake flour.

Chocolate Hazelnut Swirl Vegan Pretzel Challah
Challah is a staple Jewish bread, usually reserved for Friday night Shabbat dinners. While I never made challah growing up, I fell in love with it during the COVID-19 pandemic. Kneading and braiding the dough gave me a sense of peace and satisfaction. There's no better feeling than taking a fragrant, golden-brown bread from the oven and pulling it apart to reveal a gooey, swirled chocolate center.

Fresh Lemon Coconut Bites
These Are My Favourite Little Nutritious Bites! I have been making variations of these tasty, nutritious bites for over 20 years now - yes, since I was a teen! And yes, my sister and bro made fun of me for being a health freak, although my sister did want to open a bakery with me so I could do the healthy treats and she could do the full butter side - not a bad idea! I am hypoglycemic, so having a well-balanced snack on me at all times is essential, and was super critical as a growing and very athletic teen.

Rum Balls
Rum balls, they are delicious and potent. They’re a great party snack because you can get drunk while eating them. I got this recipe from a sad occasion, a friends father’s funeral. I know a strange place to get such a fun recipe but the person who gave me the recipe brought some (apparently, they were one of my father’s friends favorite treats). They were so tasty I asked for the recipe and I’ve made them once a year (or more) ever since. They’re sticky, tasty and fun to eat, but remember, don’t eat to many because you will get hammered.

Vegan Tuna Salad
Rumor has it we are going back to the office soon and that brings me memories of the office's lunchroom and the smelly lunches my coworkers and me so much enjoy (not): The dreaded microwaveable garlicky leftovers, the awful boiled eggs with salad, and the worst of all: tuna and it's variations. Just thinking of the smell has me hoping I was quarantined all over again.

A Nice Cuppa. Second Place in Vegan Bake-Off.
I grew up in India, and chai is a staple diet. We have chai in these cute tiny steel tumblers three times a day. Making proper chai involves freshly grated ginger, cardamom, cloves and a few cinnamon sticks. When I decided to go vegan, the hardest thing to give up was diary just because of chai. I had no issues giving up cookies/cakes or ice cream, but I had trepidation when it came to chai. For the longest time, I was vegan except for a cup of chai.

Torta di Mele: A Baking Lesson from Tuscany, Vegan-Style
Biscotti, truffles, amaretti, butter cookies, brutta ma buoni (translation: ugly but good) — if there is one thing that we can all agree on about Italians, it’s that they know how to have fun with their dessert selection. In the scenic land of summer romance, grape vineyards, fairytale architecture, vespas, and limoncello, it’s hard to ever feel uninspired, and it’s even harder to stop eating when you’re full. I promise, the waiters there won’t let you. Il conto, per favore!

Easy peasy banana cake!
When I was growing up as a child in my family home, I was brought up to be vegetarian. Vegan food was also commonly incorporated into our diets a lot too (although we were all big cheese lovers so couldn't fully commit!).Being vegan boasts so many benefits, both environmentally and of course for our health. A really great idea you can bring into your family if you aren't willing to declare yourself a vegan, is by having a few days a month dedicated to it! You might learn to love it, and realize just how delicious it can be, and that it isn't all rabbit food! My family have "vegan Monday" every week , which I'm hoping to gradually increase over time. It's a great start, and so much opportunity to find and try new yummy recipes!A favourite of mine is my mum's banana cake. Despite it being sooo delicious and quick to make, the recipe is so very simple! Worth a try right?! The ingredients are commonly found in your kitchen already, prep time is just 5/10 mins. Because it's so simple, its firm favourite to bake with children too!Banana cake is perfect for old bananas that have gone really soft. A bonus in my house, if you have children like mine who decide 1 week they love banana's and demolish a whole bunch in an afteroon.. then the next they could all be sat untouched for days until they are turning black (typical!).

Light Coconut Cake
Ever since my mother and I won a cake baking contest in her unassisted living facility. This light coconut cake with pineapple filling and cream cheese frosting has been our favorite. I call it light coconut cake because I do not like chewing on coconut shreds so the coconut flavor is not strong in this recipe. If you love shredded coconut please by all means add it to the frosting and it will increase the coconut flavor. I just learned how to make it into a vegan recipe by changing the butter, sugar, and egg whites. Which I am excited to share with you. I hope you enjoy it as much as we have.
