Casting Spells
Cooking is a kind of slow moving, deep seated magic. I have always thought of it this way...it is passed down through generations, taught with kind eyes over a bubbling stew pot and whispered in secret, absolute trust over the sizzling of onions and garlic in olive oil. Whenever I think of home, it is the food that comes to mind first. The food and the people that make it, the kitchen and all it stands for. I think that is what so many have tried to convey through food writing…that specific kind of kitchen magic that can seep into your bones and cast a hazy spell, making everything else seem distant, and secondary.

My mother never liked chocolate. She claimed it gave her terrible headaches. Aside from the fact that she usually had headaches, I took her choco-abstinence as an excuse to have more for myself. Someone had to make up for the average chocolate family intake.

A Slice of Chocolate Cake In the middle of a sleepless-night, edging towards an “early” early-morning at 3:46 am, an anonymous refrigerator-door opened and inside was a plate (covered with a stretch of plastic-saran-wrap) centered with a slice of chocolate cake. Not any chocolate cake, but chocolate cake with chocolate icing (with chocolate sprinkles) where the cake itself was made with milk-chocolate in a semi-swirl pattern with dark-chocolate having semi-sweet chocolate-bits mixed-in with bitter-sweet chocolate, sweet German-Chocolate, and white-chocolate, while the icing was made up with Couverture Chocolate (Footnote #1), and with the sprinkles made up with Compound Chocolate and Ruby (Pink) Chocolate.

Death by Chocolate O'Cake!
When the aliens arrived, it wasn't scary. It was confusing. People were already dealing with the pandemic resurgence. Covid-19 had evolved into the "Omikron" variant, which some called the "Croki Variant" due to the unfortunate death of Tom Hiddleston. In a reversal of earlier variants, covid now gave those infected superhero-level smelling. Unfortunately, this overwhelmed the human olfactory and respiratory systems. It was now twice as fatal.

My Dark Chocolate Fantasy
Here's the thing... We all have dark, twisted fantasy mines that happen to be a chocolate cake. Sounds odd, right? I can't escape the light, fluffy, ooze in your mouth chocolate cake. My addiction to chocolate cake is so bad; you'd think that I wouldn't be able to function during the day. My mind goes into spiral thinking about when I had a creamy, moist chocolate cake after a long stressful day. I love em all. Here's a juicy example, like this one time my best friend took me on a journey where we sampled a variety of chocolate cakes for my upcoming wedding. I'll let you in on a little secret; my soon-to-be husband and I made plans the following week, but I just couldn't let him see me in the state of speaking life into my odd obsession with chocolate cake. He would look at me like, I'm crazy; he might stay up at night wondering if I love chocolate cake more than I love him. I didn't know how to tell him that it's true I've fallen in love with chocolate cake after I paired a very light and airy cake with a succulent sweet strawberry fresh from our garden outback. After this perfect, brilliant pair, my taste buds experience their first taste bud orgasm.
