You know the feeling when you read a recipe and realise you only have a fraction of the seasonings they expect you to use in your cupboard? Or when they call for ingredients you have never even heard of or would have to find a specialist shop to get them? Seeing a list of ingredients as long as my arm puts me off trying the recipe. Food is something that our bodies need in order to survive and there is no way around it. Sure, you can go for long periods of time without food, but you eventually have to eat in order to live. The cleaner we eat the better we feel. If you eat junk food filled with sugar, then you are probably overweight and sluggish most of the day. When you eat good healthy food, you are able to control your weight and you feel good and energetic throughout the day. Eating healthy food is harder than you think because we are flooded with advertisements for foods and treats loaded with sugar, and everywhere you look there is a fast food restaurant waiting for you to place your order. Within a few short minutes, you can have a burger and fries in your hands and you will be on your way to your next destination. We live in such a busy world where we are always pressed for time that fast food looks appealing to us because it’s quick and easy. Hello, my little lovelies! So today's meal prep recipe was actually the product of a mess-up. I meant to make zucchini noodles with coconut shrimp, but I made a big mistake and the zucchini noodles over cooked, but they still tasted great in this recipe. This was the first meal prep recipe that I used shrimp in and it has become one of my favorite proteins to use in meal prep because 1) there's no fat and 2) it cooks fast and can take on any flavor you basically put on it. The way I see this and explain it is that it's a healthier version of the classic coconut shrimp from Chinese takeout. It still has the sweet coconut flavor but without the fattening cornstarch fried coating around it and here you can control the sweetness. I added a bit of a twist and threw in some red pepper flakes to add a bit of heat and to attempt to speed up my metabolism. Also adding vegetables to this (which is absent in coconut shrimp) makes this a lot more filling and satisfying and the best part is you don't feel bloated after eating this because it's dairy free so if you're lactose intolerant you're good to go in this recipe.
