Recipe: Coconut Curry Tofu
Hello my little lovelies! Starting this year, I'm going to adopt a mostly vegan diet (please note I said mostly) in order to get back in shape and finally give my body the nutrition its been asking for a long time now. Everybody knows that I was anti-vegan for a long time, but I've been neglecting my body for too long and I need to start taking care of it. This vegan recipe is perfect for vegans and meat eaters alike, because, first off, it is delicious and, second, there are a lot of spices and flavors in this recipe that you won't even know that there's no meat in it. All you're going to know is that it tastes good so that is all you are going to care about. I mean lets face it, tofu absorbs any flavor that you put to it so if you put beef broth to it, you're going to taste beef instead of tofu.

Hello, my little lovelies! So, today I come back to you with another vegan curry recipe. This recipe is more vegetable heavy and doesn't really have any protein in it since I was really craving vegetables that day. This dish is perfect for those who had too much protein for the day and want to double up on their veggie intake. Now, this recipe is going to take a little on the longer side because there are squash and carrots involved in this one, and they can take a little bit to cook. But the end result is totally worth it and flavor town will be arriving in your mouth!

"Meat is murder!" I would hear my obnoxious coworker yell. Kelsi was her name. Kelsi, a 5'4" brown haired girl with perfect straight across bangs, so sweet and caring, yet could snap your neck in a blink of an eye. Obnoxious is probably an understatement; she'll shout out random noises at you as she passes, her hiccups sound like a dog is barking, and she'll probably speak to you in Korean at some point, which she taught herself. She's most definitely an introvert but isn't afraid to voice her craziness or opinions.

When I started this vegan thing, I wasn't really sure what I was getting into. I did my research and read the magazines and books and just found it to be healthier. I was never in it for the activism. I just wanted to be better than the generation before me. As time went on, I educated myself and learned. What originally started as something I did for myself and my health turned into something greater. I fell in love with animals in a way I never thought I could. It felt like my body had done a complete 180. What I did not prepare for was the backlash, the questions, and the harassing comments from others.

I don't know if my story is all that much different from others that have gone vegan. Well, that's not fully true. I initially tired it to impress a girl. Yes, I tried to stop eating meat to impress a girl. Now, I know that's not the best reason to do anything in life, but like most guys courting a beautiful young lady, I wanted to put my best foot forward to stimulate her interest in me. I met her online and one of the first things I found out was that she identified as vegan. At the time, I had a basic understanding of what being vegan meant. They don't consume any animal products, they love animals, blah blah blah. I even looked up the definition of the word which said: a vegetarian who omits all animal products from their diet and a person who does not use any animal products such as leather and wool. Okay, that's good, but I'm the type of person who "goes hard or goes home" and since I really wanted an opportunity to date this girl I dove deep into the world of veganism and got a lot more then I bargained for.
