Brownies
Tell me you don't wish there was a brownie truck driving around your neighborhood right now..... I bet you can't! Brownies are a classic favorite and yes there are plenty of really good boxed mixes out there but nothing is better than a brownie (or any baked good in my opinion) made from scratch. This basic brownie is amazing - it is so decadently fudgy and packed with chocolate flavor emphasized with a touch of coffee and vanilla extract. Yes, this is going to take a little longer to make but trust me it is well worth it.

Comfort From the Past
My lips closed over the thin wheat cracker nearly obscured by the generous glob of my favorite homemade dip. Gooey, smooth and rich, I quickly grabbed another cracker and using it as a scoop, thrust another bite of the delicious French onion flavored dip into my awaiting mouth before the last bite was even finished. As I savored the taste and the mix of textures, my mind wandered to a day when this very delicacy filled not just my stomach, but my heart as well, with the sense of being truly loved and cared for.

Cooking With My Southern Grandma
Have you ever had a hankering for your Grandma’s food ? I’m lucky to still have both of my Grandmother’s and they will both cook me whatever I ask..I know I’m spoiled. One of my favorite things that my Grandma makes is chicken salad. You can get chicken salad a lot of places but none of them make it like my Grandma does. I called Grandma on the way to her house, and told her I wanted some chicken salad for lunch. We crossed referenced what she already had at home and what was needed. I swung by the grocery store and picked up the items she said we needed. With a handful of bags, knocking on my Grandma door I could see through the window that she was already starting in the kitchen. She dropped her dish towel as I came in, and said “Dropped my dishcloth, a stranger’s coming hungry.” I laughed and said “What,Grandma ?”. She said, “ That's an old saying my Momma used to say when she dropped her dishcloth.” As she began to cook we talked and laughed and I took notes on her chicken salad process.

Chicken and Rosemary Meatballs with Sautéed Tomatoes and Spinach
These chicken meatballs are something I've been thinking about this one for a while, but have only recently gotten around to making it. I wanted to try something different with meatballs besides beef and veal. I haven't tried it yet, but I would imagine this would go great with lamb in place of the chicken. I'm a big fan of the lamb and rosemary flavor profile. No matter which protein you use, you're welcome to experiment with recipe, these meatballs will go great with a pasta dish!

Brown Butter Coconut Almond Cookies
Cookies - who doesn’t like cookies? People who are not to be trusted…..lol. As a chef I love working up new recipes my waistline not so much, but hey someone has to do it. These cookies are the perfect blend of textures, the edges get golden and crispy while the middle stays slightly soft. The nutty brown butter, sweet toasted coconut, and crunchy almonds are a perfect combination. I hope you take the time to make these and love them as much as I do.

Duck Confit
Duck is my absolute favorite protein. I have always enjoyed it but the real love affair started when I was working as the Executive Chef at Third & Vine in Jersey City, NJ. We had tried a duck prosciutto for our charcuterie offerings and it was amazingly delicious but the cost was a bit high. I decided to try my hand at making something similar and came up with a smoked duck breast that was easily as delicious and cost us less to make. It was one of our most popular sellers for the 3 years I was there.
