Now I don't know about you but I am definitely a food-oriented person. I plan my day around my meals and I love to eat. I worked with a girl once that told me she always forgets to eat and it shocked me so much I choked up a little bit. I always used to half-joke that if I failed at everything else in life I would pursue becoming a competitive eater because, boy. Could. I. Eat. In summary, food is very much a passion and priority of mine.

Indian food can never do wrong in my eyes. It’s the melodious blend of spices and textures that makes me crave this cuisine on special days. The last time I had Indian food was before my vegan transition where I was quite obsessed with chicken tikka masala and other meals that included meat. I thought my days of enjoying this food was over, until I stumbled upon Healthy Bird.

Before going vegan, spaghetti bolognese was one of my favourite meals. I remember when mum would say it was spaghetti night, I would be very excited! I had to make sure when going vegan that I could make the meals that I have always enjoyed, but veganized, and I think with this recipe I have succeeded.

Eggs are sexy. I don’t care what anyone says, and if you don’t like eggs, you’re wrong (barring you poor souls with egg allergies, my heart bleeds for you). The stories about cooking eggs being used as an interview in great kitchens? Yup, it’s a thing. I almost had to make the maple poached eggs I covered in my post on maple for a stage once, and just the mention of the things got me the interview. What I’m saying is, eggs are no joke (insert pun here). My everyday breakfast food? Eggs, in some way shape or form. Rent meal staple? Eggs, in shakshuka or in a spicy cream sauce with chickpeas, and if you feel like it, prosciutto. My death row meal? Probably eggs, to be honest. Keep your lobster, truffles, and wagyu, and lay me down with a scramble or eggs Benny.

I happen to live in a town that has the best blueberry picking. People come from all over the place just to get a chance to pick these delicious blueberries. It makes blueberry desserts an instant go to in the summertime. Now I don't know about where you live, but where I live here in Canada, we are on our fifth winter of this year and I am over it. But since the snow isn't going anywhere for a little while, I thought the next best thing would be to make some of my favorite summertime desserts in anticipation of the warmer weather.

1. It's a gradual process. Although some people may do best by quitting animal products cold turkey, it can make the process a lot easier if you slowly incorporate vegan meals into your diet. You can start by eliminating red meats, then poultry and fish, and finally eggs and dairy. You can also just try out being vegetarian and then work your way up.
