Unless you're a real professional pitmaster, there's only so much that a poorly crafted barbecue pit can do. Cooking the old fashioned way is difficult and frankly, it often means that you will end up doing twice the work and only get bare-bones results. Even those of us with the most in-depth cook books could only get mediocre results without the best gear.
