The Choice
We ended 2020 with surf and turf and an evening gaming with members of our safe six. Way back in the before, on March 14, 2020, we'd decided that the eight of us would be our safe group. And none of us would see other people without masks except in very special circumstances and that when that happened, we'd quarantine and warn the others in our group.

Abuela's Cookbook
Rico grew up in the kitchen cooking with his abuela. She used to make the most amazing dishes. Steaming tamales, chilaquiles, mole, enchiladas. Tacos with the most succulent of beefs and chickens; she always made it so juicy and robust in flavor. To this day he still had no clue how she did it. When she passed away a part of him died with her; he only thought it right to honor her memory and encourage his passion of cooking by going into the culinary field. The plan was to get enough additional cooking skills that he could start his own food truck and travel, spreading the joys of Abuela's cooking.

Chicken and Veggie Soup Recipe
For those of you like myself, soup can be either a seasonal comfort or a necessity when I am sick. In my opinion, soup is one of the most versatile dishes out there. You can choose between tomato with grilled cheese, baked potato with bacon bites, cheese, and chives, broccoli and cheddar, tom kha gai (coconut soup), chicken noodle, vegetable, and so much more. Every time I make soup it's like a culinary freedom where I can throw whatever I have into a pot and make something delicious. Zuppa Toscana from the Olive Garden and Tom Kha Gai are two of my favorite soups that, thanks to technology, have been recipes I have gotten to explore and rather enjoyed. I was known as the "sick/broken" child in my family. Always breaking bones or getting sick, a cold could honestly have taken me out, at least that's how it felt.

Eating Meat Again and the shame that came with it
I ate meat for all my years until I was twenty eight. I had fasted for the religious Hindu festival, Divali for the first time, and just decided to keep it going even after the deeyas were packed away. I didn't miss the meat. I was deep into my yoga practice, and the value of non-violence was important to me. That meant no killed animals. There were plenty of nutritious plants that could feed me, and I still believe this.

Quit it with the vegan mac & cheese
I'm not a vegan, but Instagram sure thinks I am. I keep getting ads for dairy-free Ben & Jerry's, and on the discover page they always show me posts from plant-based living accounts. It's my own fault really, and also not entirely unwelcome. I spend a lot of time looking at food and seeking out recipes on the app, so I end up following plenty of recipe developers, many of whom are vegan. They grab you with their bright colours and creative plating, as well as the ethical positive reinforcement of waste-free potato skin chips and cruelty-free mayonnaise.
