Memories of Baking with Mama
I have a few great memories of baking with my mother. She's a great cook and incredibly talented at anything she puts her mind to so I learned a lot by watching and assisting her. I made it a point in life to try to spend some time in the kitchen with all the people who mattered most to me and become a sort of living recipe book by learning their particular tricks of the culinary trade. I've been fortunate to actually learn a lot of diverse cooking with some really incredible people and if there is one thing besides music that can unite people of all walks of life it is food!

A Sensational Vegan Pancake. A Chia Seed Vegan Pancake.
How can I ever forget Vegan Chia Seed Pancakes? These are some of the most scrumptious vegan breakfast items and can also be eaten for dessert. First off, what even is a Chia Seed? Chia seeds are the edible seeds of Salvia Hispanic, a flowering plant in the mint family native to central and southern Mexico, or of the related Salvia columbariae of the southwestern United States and Mexico. But how are Chia Seeds good for you? Chia seeds contain large amounts of fiber and omega-3 fatty acids, plenty of high-quality protein, and several essential minerals and antioxidants. They may improve digestive health, blood levels of heart-healthy omega-3s, and risk factors for heart disease and diabetes.

A minor change of plans
My mom always said she had to have something sweet to eat after her meals. Especially lunch and dinner, she said she never felt quite satisfied. Now, this truly could have been solved by some sessions with a nutritionist, but who am I to judge. As a nutritionist and devout vegan for 26 years, I would love to give her food advice if she asked.

Mama Eze's Jam Cake: A 19th Century Recipe Gets a Vegan Makeover. First Place in Vegan Bake-Off.
History and food. You may not think the two go hand in hand, but as a longtime teacher and student of history and an enthusiastic foodie, I believe that one of the best ways to study the past is through...you guessed it, cooking and eating.

Vegan Chocolate Cake
I was so excited when my sister Lisa's husband Mitch asked me to bake her birthday cake. After over 20 years living in different states, she and I now live close by each other. I have been so grateful to see her more often, and was so glad to be there for her birthday. We had always been emotionally close, but our physical closeness filled me with joy and contentment. Our mother always used to bake our birthday cakes, (we lost her many years ago to lymphoma) and I felt as though a torch had been passed.

'Unbeetable' Red Velvet Cake
For me, nothing beats red velvet cake: the rich chocolate flavour, the deep red colour, and the sweet smoothness of the frosting. It all combines to make a heavenly eating experience. As both an avid taste-tester and baker of red velvet, I never thought any recipe could compare to the traditional one I'd perfected, until I created a vegan version out of dietary necessity. This recipe, is truly unbeetable.

Silky Chocolate and Orange Vegan Pie w/ Vegan Whipped "Cream"
Eating a vegan diet is not only kind to our bodies but to animals and the environment as well. Anything we can do to eat vegan, even if only occasionally, can have a substantial positive impact. But does that mean vegan desserts are bland and uninteresting? Absolutely not! And, while it is great to keep it simple and quick, it doesn't mean a vegan should always be relegated to the corner with a bowl of sorbet or fruit salad for dessert. There is a bevy of bountiful desserts just waiting to please the vegan palate, such as this Silky Chocolate and Orange Vegan Pie. This dessert will "wow" those you make this for, vegans and non-vegans alike!

Perfectly imperfect gingerbread creations
These imperfect little beauties are even yummier when you know how much fun has been had making them. The spicy scent encompassing your kitchen when they’re baking is divine. They are a super-quick bake and a real crowd-pleaser. I have served these to friends at coffee-mornings and children at birthday parties, and they always get a thumbs up. The other bonus is that they are perfect at any time of year.

Vegan Iced Lemon Blueberry Scones
When I was 14 years old my mother entered the kitchen to find me doubled over in pain, clutching my abdomen, and crying. Cramps, she thought as she rubbed my back. Well yes, but I wasn’t having my period. I had just come from soccer practice, sweaty, thirsty and tired, and was drinking my second big glass of cold, creamy milk. So satisfying. That is, until it felt like my intestines were trying to escape from my body.
