Red or Green, Albuquerque is Home
I moved to Albuquerque back in 2007. With two children in tow, my husband at that time and I had rented an apartment sight unseen that was located off the I-25. After living in the swampy, wetlands of Bay City, Texas, and dealing with hurricanes Rita and Katrina, we were ready for the desert.

How Meal Prepping Saved My Life
In high school I was rather athletic and one thing that teammates look to do after an event is get dinner. Fast food became a normal thing two or three times a week, which was fine in my teens but as I got older it became a real problem. Growing up, I never learned how to cook and this added to the need to go out and buy food already prepared. Again, I turned to McDonalds, Taco Bell, and Wendy’s to help me out when my stomach started rumbling. Due to this, I became obese in my early twenties and would develop kidney stones at the age of twenty-five. The experience was so painful, I decided to make a change in my life and learned how to cook but the thing that would be the most beneficial for me would be meal prepping.

This vegan fruit cobbler recipe is simple and will have you out of the kitchen and enjoying a delicious dessert in no time!

Sweet Potato Biscuits
Spending the night at my nana's house was always an adventure growing up. She has a gargantuan playroom that was full of all our favorite toys, and her house sits on several acres of property in the Tennessee countryside, complete with a pond, a golf cart, a wide front porch, all kinds of wild birds and animals, and basically anything a country kid could desire.
