Thinking of a time before COVID, sitting by a campfire, laughing, dancing and eating S’mores (with friends). There are such fond memories of the combination of Graham crackers, chocolate and marshmallows, but mostly friends. This is in honor of the memory of the destination wedding weekend in Texas where it was the last time the “motley cru” got together. We all, first, met while working together at a small bistro in the heart of the city. A bartender, a waiter, a chef and a Maitre’ D. We formed a bond that lasted years; even after leaving one by one and moving onto bigger or just other things. Significant others have come and gone, life since then has Happened!! We joined together on a lake in Texas to celebrate the wedding of our chef, we sat by a campfire roasting marshmallows, barbecuing meat, peppers and anything else we could expose to heat. It was a sweet, spicy and deeply flavor full weekend.

Strawberry Funnel Cake Frappuccino
A little too late, or it never hit my small town of Cleveland, Tennessee. The Unicorn Frappuccino looked so good as I was wandering online to find the perfect Starbucks drink to write a review that I have not tried yet. As I called one of the local Starbucks, they seemed a bit clueless about what I was asking for but ensured me they have a unicorn cake pop.

Gado-Gado Inspiration Bowl
I discovered gado-gado in a dog-eared copy of The Moosewood Cookbook I picked up in college. Although it’s an unapologetically vegetarian cookbook, when I bought it, I was decidedly NOT. I had grown up in a household that consumed something like five hundred pounds of potatoes a year and had an entire chest freezer devoted to meat. Vegetables other than potatoes appeared as garnishes to the real stars of the plate: meat, meat, more meat, and potatoes. Salads consisted of shredded carrots and iceberg lettuce that was starting to brown. When I got to college, I tried to live off of boxed cereal and pizza for a long time. Not ideal.

Steak dinner for two
My wife has been working very hard on getting her insurance license the past couple weeks, and is approaching her exams. She is taking her courses in the evenings after working a full time 40-50 hour per week factory job. We were grocery shopping last night and my wife kept checking out the steaks. While she wasn’t looking I picked up two of the biggest ones in the meat cooler and slid them into the shopping cart. As we continued shopping I slid a few more things in under the radar; asparagus, sweet potatoes and a box of red lobster biscuit mix (my wife’s favorite). The surprise unfortunately only lasted until the check out line, but oh well.
