Best Ever Brown Rice I heard a lot of good things about brown rice and I have been told it is nutty and delicious, even better than the white rice. I tried it and was not impressed. But I realised it was not cool to state that I hate it. I must say I have switched from white rice and never felt better etc etc. But I am not cool enough to be that dishonest and state in public that brown rice is the tastiest thing in the world and order tacos and pizzas when no one is looking. If I do something, I need to do it somewhat honestly. So I started to think about how I can make brown rice palatable for me! This required a visit in the past.

Made with a side of Avocado Ranch Dressed Salad and a Cocktail. This is a pure favorite to me. I love gravy in any meal and on a sandwich were I can dip it in is a meal goal. New Orleans has helped guide my taste bud to surprisingly simply meals to make and eat. A Roast Beef PoBoy is at the top of my list. It is a great pregame meal or a good meal to have while staying in for a family meal. I went to my local grocery story ( Thank you Food Lion) and got Roasted beef on a 2 setting, the lowest setting. A lot of us are looking for a lighter option than greasy delicious fries so I made a side of salad with a simply Avocado and Ranch “green” dressing that is flavorful with hints of lime. Drinking a bubbly STRONG cocktail always goes well if a hearty sandwich. Four Loko ,the classic, mixed with juice is like the drunk cousin of a mimosa.

What is that wonderful aroma resonating from the kitchen? It has to be my favorite dish, red sauce made for linguini, spaghetti, lasagna, and fresh garlic bread to be dipped in it. The secret is the cooking time, and since there has been more time than needed during this quarantine, it was a good time to revisit the recipe and enjoy a traditional Italian dinner with my family.

Some people might pair a wine or cocktail with this meal…I would just serve water as a beverage with this delicious soup so as not to alter any of the tastes you’ll encounter in a single savory spoonful. Instead, I might suggest pairing your meal with a good read like “A Natural History of the Senses,” by Diane Ackerman, or perhaps the poetry of Rumi? After all, even though we pine for the pandemic to be over, one benefit is having more time to make our meals a celebration of the senses while dually assisting our coping mechanisms… for as the famous French chef August Escoffier said, “soup puts the heart at ease.”

Growing up in a Mexican household in a small border town in South Texas, I had access to the best homecooked Mexican food 24/7! However, when moved away to Boston for college I realized I missed good homecooked Mexican food. I tried a variety of places, but nothing tasted just right. As a result, I started playing around with food. That’s when I really found my passion. Cooking was a way to bring my loved ones together. Hosting soon became a weekly event. I loved every minute of it. It was a way to expose my friends to Mexican cuisine. One of my favorite dishes to make was green enchiladas at home. I couldn’t not seem to find them when I just moved here. However, thanks to Whole Foods I was able to find green tomatillos so, I soon started experimenting. After many many experiments, I concocted a, fast, fresh green enchiladas recipe that tasted just like home. These enchiladas have so much flavor and are really filling. These are vegetarian and gluten free so all my friends could enjoy them! I cook them at least once a week. They never get old trust me. This recipe can be easily modified. If you love spicy add a another pepper, or swap you jalapeños for serrano’s. If you can’t find green tomatillos you can use red tomatoes. Additionally, this salsa base can be used on other recipes. For example, chips and salsa, as a salsa on tacos, or on fried eggs for breakfast. Enough about the enchiladas. No good meal is complete without a proper cocktail! So I decided to pair this dish with a hibiscus margarita. Sweetened hibiscus water was always a staple at my house so why not kick it up a notch with a bit of tequila! Hope you enjoy!
