Dhammadai(Unique snacks of Kayalpatnam)

Usually everyone like sweets. Infact many of us addicts to sweets like Gulab Jamun, Rasagullah, Laddu and many more in South India.These are all time favourite sweets and best ever in our life.But these are the very common sweets of south India.

Dhammadai is one of the very unique & top notch snack of south India,especially in Kayalpatnam(Tamilnadu).We are very fame for the foods & snacks that you had ever seen over other places of Tamilnadu.We usually gift this sweet to relatives,Marraige & Engagement functions. I'm happy to introduce one of our traditional & Unique sweets that we supplying all over Tamilnadu.

Are you out of tamilnadu or foreigner?no worry!Here comes the recipe of Dhammadai. Dhammadai is a sweet snack & it will remain good for 10 to 12 days without refrigeration.It takes around 7 to 8 hours preparation time.Here we go!

Ingredients:

  • Coconut 3 Big size to get 300 ml coconut milk
  • Semolina/Sojji : 1/2 kg
  • Boiled Thick Milk 250 ml
  • Maida Flour 50 gm
  • Sugar 450 gm
  • Cardamon 7-10
  • Baking powder
  • 3 Eggs
  • Ghee 250 gm
  • Nuts(Cashew,Almond)

Preparation

    The main ingredient of the dhammadai is coconut milk & Semolina/Sojji.

    First we should break the 3 coconuts,grate it and then blend it into the mixy without adding water.

    Note:We should not add even a drop of water.It will spoil the texture.

    1.We need only the first squeeze of coconut milk powder.(Means,need the first squeezed coconut milk)

    2.Once we get it,add the Semolina/Sojji(You can even mild fry the Semolina/Sujji)and Maida flour into the first coconut milk

    3.Boil the Thick milk(without adding water) and add it into the mixture

4.Mix & stir it well .You will get a thick consistency.Just keep it rest for 4 to 5 hours.(Not more than 5 hours,if so,it will produce a sour taste spoils the sweets)

5.During the time of isolation of the above mixture,we must powder the sugar along with cardamon(Adding the sugar directly into the mixture will get the crispy bits of sugar on dhammadai,which means sugar wont dissolve on this mixture)

6.After 4 to 5 hours of isolation,we can now add the sugar & cardamon powder with the mixture.Mix it well.Now you will get the pouring consistency.

7.Again keep it isolated for half an hour,add the eggs into the mixture.

Note:Add the egg once it is beaten well,otherwise it will form minute balls which will again gives you a egg smell while tasting.

8.Add baking powder to get a floppy rise and add ghee which gives you the pleasant smell

9.Finally decor it with nuts in the top of the sweet mixture.

Usually we use a unique cups or plating to get the shapes in the image.You can use any baking tray that you have.

Before we oven it,we need a small amount of mixture of Ghee & Maida Flour. Just wipe this mixture with brush or hand in the tray before pouring your Raw sweet mixture into it.(This will avoid the sweet to stick in the tray)

Once wiping done,pour your sweet raw mixture into the tray and keep it in oven.

Note:Before keeping the tray into the oven,preheat the oven 180 degree celsius,both side heating for 20 minutes.

Now you keep the tray into the oven and wait until the top layer get a brownish colour. Once done take out from the oven and wait for 5 to 10 minutes to cool it.

Finally you invert it on the plating and you will get a soft,smooth & spongy Dhammadai.

(Cover the sweet seperately from each other otherwise it stick with each other)
