Kothu Parotta is a popular street food dish from South India made from chopped roti, vegetables, and meat (optional). While we searched for the best supper foods over South India,Kothu Paratto will be the one among that.We usually get it in street hotels, which gives us a mesmerizing feel with the air blows.

Yesterday I experienced that with my partner and gives a feel of romantic dinner. The same we can do it in our home with more spicy and yummy taste. Here is the recipe:

Ingredients:

• Roti (Indian bread)

• Onion

• Tomato

• Bell pepper

• Garlic

• Ginger

• Meat (optional)

• Spices (cumin powder, coriander powder, turmeric powder, chili powder)

• Oil

• Salt

• Egg (optional)

Step 1:

Roti/Parotta is a layered, flaky Indian flatbread that is typically served with a variety of curries and stews. Here is a simple recipe for making parotta:

*In a large bowl, mix together 2 cups of flour, 1/2 teaspoon of salt, 1/4 teaspoon of baking powder, and 2 tablespoons of oil.

*Slowly add water and knead the mixture until it forms a smooth, non-sticky dough.

*Cover the dough with a damp cloth and let it rest for 30 minutes.

*Divide the dough into 6-8 equal-sized balls.

*On a lightly floured surface, use a rolling pin to flatten each ball of dough into a thin, circular shape.

*Brush each layer with oil and stack them on top of each other.

*Roll out the stack of dough into a large, thin rectangle.

*Cut the rectangle into long, thin strips.

*Roll each strip into a tight spiral, tucking the end under the spiral.

*Heat a large skillet or griddle over medium-high heat. Place the parottas onto the hot surface and cook for 1-2 minutes on each side, until lightly browned and puffed.

Step 2:

After the roti is taken out from fire,

1. Cut the roti into small pieces and set aside.

2. Heat oil in a pan and add chopped onion, tomato, bell pepper, garlic, and ginger. Cook until soft.

3. Add the spices and cook for a minute.

4. Add the chopped roti and mix well with the vegetables.

5. Add the optional meat and cook until fully done.

6. Optionally, crack an egg into the pan and stir to combine.

7. Cook for a few more minutes until the kothu roti is well mixed and heated through.

8. Serve hot with chutney or sauce of your choice.

Enjoy your kothu Parotta!
