The history of Bombay Chicken Biryani dates back to the late 19th century when the dish was first created in the city of Bombay, India. The dish was created by the Parsi community, who had migrated from Persia to India in the late 19th century. The Parsi community adapted the traditional Persian dish of biryani to their own tastes by adding local ingredients such as coconut, chilli and coriander.

The dish was then popularised by the Indian Railways, which served it on their trains. Today, Bombay Chicken Biryani is a popular dish in India, with many restaurants serving the dish in various styles. It is also popular in other countries, particularly in the United Kingdom and the United States.

Prepare Bombay Style Chicken Biryani

Ingredients:

For the Chicken:

• 2 lbs chicken thighs, boneless and skinless

• 1/4 cup plain yogurt

• 2 tablespoons ginger-garlic paste

• 1 teaspoon garam masala

• 1 teaspoon turmeric powder

• 1 teaspoon cumin powder

• 1/2 teaspoon red chili powder

• 1/2 teaspoon coriander powder

• 1 teaspoon salt

• 2 tablespoons oil

For the Rice:

• 2 cups basmati rice

• 2 tablespoons ghee

• 1 teaspoon cumin seeds

• 1 cinnamon stick

• 4 cloves

• 4 cardamom pods

• 2 bay leaves

• 1 teaspoon turmeric powder

• 1 teaspoon salt

• 4 cups water

Instructions:

  1. In a large bowl, combine the chicken thighs, yogurt, ginger-garlic paste, garam masala, turmeric powder, cumin powder, red chili powder, coriander powder, and salt. Mix until everything is evenly incorporated.
  2. Heat the oil in a large skillet over medium-high heat. Add the chicken and cook for about 10 minutes, stirring occasionally, until the chicken is cooked through and golden brown.
  3. Meanwhile, rinse the basmati rice under cold water until the water runs clear.
  4. In a large pot, heat the ghee over medium-high heat. Add the cumin seeds, cinnamon stick, cloves, cardamom pods, and bay leaves. Cook for about 1 minute until fragrant.
  5. Add the rinsed basmati rice to the pot and stir to coat with the spices. Add the turmeric powder and salt and stir to combine.
  6. Add the water and bring to a boil. Reduce the heat to low, cover the pot, and simmer for about 15 minutes, until the rice is cooked.
  7. Once the rice is cooked, fluff it with a fork.
  8. To assemble the biryani, layer half of the cooked rice in the bottom of a large pot. Top with half of the cooked chicken. Top with the remaining rice and chicken.
  9. Cover the pot and cook over low heat for about 10 minutes, until the flavors have melded together.
