Parotta, also known as paratha or parutha, is a deliciously flaky and buttery flatbread that is popular in southern India and Sri Lanka. Ingredients:

2 cups maida flour (all-purpose flour)

1/2 teaspoon salt

1/2 cup warm water

1/4 cup oil

Additional oil for frying

Instructions:

In a large mixing bowl, combine the maida flour and salt. Slowly add the warm water and oil, and mix until a dough forms. Knead the dough for about 5-10 minutes, until it becomes smooth and elastic.

Cover the dough with a damp cloth and let it rest for at least 30 minutes. This will allow the gluten in the flour to relax, making the dough easier to roll out.

After the dough has rested, divide it into small balls. Flatten each ball slightly and dust it with flour.

Heat a skillet over medium heat. Take one dough ball and start rolling out into a circle shape with the help of flour.

Once the skillet is hot, place the rolled out dough on it and cook for about 20 seconds. Flip it over and apply oil on the cooked side, and cook for another 20 seconds.

Apply oil on the other side and cook it for 20 seconds. Keep flipping and cooking the dough until it is golden brown and crispy on both sides.

Repeat the process with the remaining dough balls.

Serve the parotta hot with your favorite curry or gravy.

Note: Parotta is usually made by layering the dough and oiling it between the layers, this is called "Kerala Parotta" which is bit different from the above method.
