Working my way out of a food prison
The beginning of the pandemic, around the same time last year and the related lockdowns, disoriented people worldwide. While everyone was locking themselves up, shuttering their businesses, fearing for their lives, and avoiding all outside contact to keep themselves and their families safe, one particular issue hit most people across the world the hardest, and in equal measure – how to get clean, healthy food in sufficient quantities for families to survive the lockdowns. Everyone would run-up to the grocery stores, only to find them stocked out of fresh produce (and toilet paper) and go on to find the next 3 grocery store stops in the same state. On one such occasion, after 2 hours of roaming about stores, all I could come back home with was one 2-pound cabbage and a bunch of bananas. Pretty sure everyone had similar experiences and it was not unique to me. What I didn’t realize at the time was that, even when there is no pandemic looming, for about 23.5 million Americans, this was a daily ordeal.

During the beginning of the pandemic in March 2020, both my husband and I, like the rest of the world stopped going to the office for work. I ended my job all together and he set up his home office to work from home. In the beginning it was a fun and new adventure for us both. I was determined to get fit, make meals every day, and reap the benefits of being a stay-at-home mom again for the second time in my life. The reality of it though, was that none of that actually happened.

Here's How I Feed My Picky Toddlers Veggies
Around 5:00 PM every evening, I hear the chorus of the witching hour: “my tummy’s hungry!” My 3-year-old twin toddlers—without missing a beat—always come clawing at me for food right before dinner time. You know what the amazing part is, though? Whenever I sing out through the house, “dinner’s ready!” shortly after (and serve their plates that include new vegetables), their tummies all of a sudden seem like they’re not hungry after all. Watson came to in the rusty dumpster behind Pal’s lounge with a splitting headache and a sore ankle. He started piecing together how he got there when he noticed his head was covered in dried blood. Must have really irked someone in the bar, he thought, something Watson tended to do after a few pints of Guinness. He felt the small gash above his eye and decided he was fine; the eyebrow area would bleed vociferously from a paper cut. It looked worse than it was. Climbing to his knees he began to take inventory of his surroundings. It was all trash: newspapers, beer cans, a shredded leather barstool seat, exactly what you’d expect to find in a dumpster behind a dive bar. While stumbling to his feet Watson noticed a small plastic container near the corner. It was somehow wedged there so that it wouldn’t come out during any trash pickups. Watson shuffled over and wiggled it free; he fell backwards into the trash heap when he realized what it was.
