The simplest and –--souuuper delicious Cream of Broccoli ;)

This recipe is as comforting as it is lip-smacking.

Coz this green vegetable-cum-superfood is not an Indian staple, there aren’t many broccoli sabzis. Neither is there a diversity of soups in Indian cuisine.
The only soups I’d known growing up where oriental- you know, the kind that have soya sauce, vinegar and MSG( I was obsessed with them, of course)
However, before long, something niggled at my foodie brain, making me try other soup recipes. Since then, I’ve looked for the best one; watching a ton of videos and as many tutorials( I didn’t try any of them).
But one day, I decided to cook on my own, using some simple ingredients and my own intuition….And it was PERFECT – creamy, warm, and a little spicy (come on, I am an Indian) and not to mention, the fresh herby taste of the Broccoli. I was pretty surprised at it, created by just some milk, onion and garlic. I hadn’t added amy Flour or cream or cheese or broth or any other fancy stuff (save for the oregano).
This recipe is an appreciation of simple things in life.


Let’s talk what goes in (apart from Broccoli)
1. Fat- oil is good, butter is better. Ghee is the best.
2. Garlic- the quintessential aromatic in every cuisine.
3. Onion- it imparts a mellow flavour and body.
4. Milk- to balance the flavour and to make the liquid creamy and smooth.
5. Oregano- to take the taste up a notch.
6. Salt and pepper- last but not the least of every dish.
The recipe-
Prep time: 10 minutes
Cook time: 25 minutes
Total time: 35 minutes
Serving: 2

Ingredients:
1 Broccoli- florets cleaned and roughly chopped.
Garlic- 1 tbsp.
Oil/butter- 2 tbsp.
Onion- 1 medium-sized
Milk-1/4 cup
Oregano-1tsp
Black pepper- 1 tsp
Salt: as per taste
Chili flakes- 1 tsp.

Method:
• In a pan, heat oil on medium heat for 2 minutes. Add garlic and saute for a minute.
• Add onions and continue sautéing until translucent.
• Toss in the Broccoli and fry on low flame for 5 minutes, till they are slightly browsed.
• Turn off heat and let it cool a little.
• Then, transfer it all to a blender. Mix in the milk and blend untill smooth.
• Transfer the mixture back into the pan and set it on high heat.
• Once it comes to boil, add the oregano, black pepper, Salt and Chili flakes.
• Let it simmer for at least 5 minutes. Your soup is ready.
• Serve it immediately with some bread and enjoy.

Prior to beginning on your custom made soup, make a point to get an adequate number of fixings to twofold the recipe. Alongside being not difficult to make in huge bunches, soup is one of the least demanding food sources to freeze. With enough fixings and a greater pot, you can make extra natively constructed soup for a delectable supper on a bustling night when you don't have the opportunity or energy to cook.
