Preparation of Sindhi Chicken Biriyani

Ingredients:

2 cups Basmati rice

• 3 tablespoons vegetable oil

• 1 onion, finely chopped

• 2 cloves garlic, finely chopped

• 2 teaspoons finely grated fresh ginger

• 1 teaspoon ground cumin

• 1 teaspoon ground coriander

• 1 teaspoon ground turmeric

• 1 teaspoon ground red pepper

• 2 bay leaves

• 2 tablespoons fresh mint leaves, chopped

• 2 tablespoons fresh coriander leaves, chopped

• 2 tablespoons fresh green chilies, chopped

• 2 cups chicken, cut into cubes

• 2 cups water

• 1/2 cup yogurt

• Salt, to taste

• 2 tablespoons ghee

• 2 tablespoons sesame seeds

• 2 tablespoons slivered almonds

• 2 tablespoons raisins

Instructions:

1. Rinse the rice and soak it in water for 30 minutes. Drain and set aside.

2. Heat the oil in a large saucepan over medium-high heat. Add the onion and cook until it is softened, about 5 minutes. Add the garlic, ginger, cumin, coriander, turmeric, red pepper and bay leaves and cook for 1 minute.

3. Add the chicken and cook for 5 minutes. Add the mint, coriander and chilies and cook for 1 minute.

4. Add the water, yogurt and salt and bring to a boil. Reduce the heat to low and simmer for 10 minutes.

5. Add the drained rice and stir to combine. Cover the pan and cook for 15 minutes, or until the rice is tender and the liquid is absorbed.

6. Heat the ghee in a small saucepan over medium heat. Add the sesame seeds, almonds and raisins and cook until the nuts are lightly browned, about 2 minutes.

7. When the rice is cooked, remove from the heat and fluff with a fork. Sprinkle the nut mixture over the top and serve. Enjoy!
