2 cups egg noodles

1 cup frozen peas

Salt and pepper, to taste

Instructions:

In a large stockpot, place the whole chicken, carrots, celery, onion, and garlic. Fill the pot with enough water to cover the chicken and vegetables. Add the bay leaves, thyme, and season generously with salt and pepper.

Bring the pot to a boil over medium-high heat. Once it reaches a boil, reduce the heat to a gentle simmer. Skim any foam or impurities that rise to the surface.

Simmer for about 1.5 to 2 hours, or until the chicken is tender and cooked through. The broth should be fragrant and flavorful.

Remove the chicken from the pot and shred the meat, discarding the skin and bones. Return the shredded chicken to the pot.

Add the egg noodles and frozen peas to the pot. Continue simmering until the noodles are tender, typically 8-10 minutes.

Stir in the chopped parsley and season the soup with additional salt and pepper to taste.

Remove the bay leaves and discard them.

Serve the chicken noodle soup hot, garnished with a sprinkle of fresh parsley for a burst of color.
