Musallam Raan
There are two popular versions of Mutton Musallam Raan, one in North Indian Style and the other in Mughlai Style. The North Indian Style is milder in flavor and less spicy compared to the Mughlai Style, which is known for its rich and spicy flavors. Both styles involve cooking the mutton in a sauce made with spices, onions, garlic, ginger, and tomatoes, but the Mughlai Style also includes additional spices such as cardamom and cinnamon, which gives the dish a distinct flavor.
Raan or Whole roast leg of lamb; served for its ostentatious presentation and long cooking time. The dish is prepared using classic spices, marination and cooking technique. Traditionally using goat is what makes Raan and its slow cooking technique such an integral part of the recipe. Goat that can be tough although marinated in spices, and cooked until it is melt in your mouth.
For my recipe I have used lamb . First with a dry spice rub then a yogurt based wet marinade. Yogurt in the marinade gives a thick rich consistency. Tenderizing the meat is a common practice in Indian cooking and there are lots of ways, I’ve opted to use raw papaya to make meat tenderize. Leave it at room temperature for a few hours before refrigerating which enables the meat to absorb all the flavours. The whole process seems lengthy with so many ingredients but I promise you its definitely worth the effort!

INGREDIENTS FOR 4 PERSONS
Leg of Mutton 500 gm
Cashew nuts 55 gm
Dry Coconut 55 gm
Raisins 55 gm
Red Chillies (without seeds) 5 gm
Salt to taste
Garam masala 5 gm
Garlic 3 flakes
Coriander 10 gm
Ginger 10 gm
Curds 115 gm
Fat 115 gm
Lime 1
Raw Papaya (peeled) a small piece
How to Make Musallam Raan
1. Grind coriander, chillies and garam masala into a fine paste.
2. grind coconut, cashew nuts, raisins.
3. Grind garlic and raw papaya. Mix with curds and salt. add lime juice.
4. Wash the leg of Mutton. With a pointed knife make several gashes all over.
5. smear leg with curds mixture and keep aside for 15 to 30 minutes to allow mixture to seep in.
6. Smear ground Chillies and garam masala paste over.
7. Finally smear the cashew nut paste.
8. Put the fat into a strong pan. add the leg and turn till browned on all sides reduce fire to very slow cook covered till meat is cooked. Turn frequently.
9. Live coal may be put on the lid to help the cooking.
