Howdy to all of you super-outdoorsy souls who are already planning your menu for this spring’s camping, climbing, rafting, bicycling, kayaking, or hiking trip. It’s a general truth that dehydrated meals are the way to go when you’re going to be carrying any kind of weight on your back or in your boat . . . and it’s also true that while some of these expensive, ready-made meals that you buy in outdoor stores are pretty darned good, others are, at best, kind of mediocre. Why not set mediocrity aside and start each day on the trail with a fresh and energizing cup of Bircher muesli? It’s easy to make, and it tastes great.

Lord Percival's Chicken
Lord Percival was Eugenia Starnes’ elderly Maine Coon cat whose health declined upon the death of his lifelong companion Lady Gwendolyn, a calico mix. Percy was not eating and anyone could see his days were numbered. Eugenia bought all his favorite foods but he ignored them all after a cursory sniff and lick. When things were looking their bleakest, she decided that before putting him down, she would do her best to make him something he couldn’t resist. She thawed some boneless chicken thighs, then bustled around assembling other ingredients which she combined with the meat in a baking pan and put the whole thing into the oven for an hour. When it was browned and bubbling, she took it out to cool on the counter while she left to run some errands.

Peanut Butter Cheesecake
I love cheesecake! I love making it and eating it. The recipe for this crust came about from necessity - during the COVID pandemic I am staying away from large public places including the gorcery store. I didn't have any graham crackers at home but had a family sized box of cornflakes so I got creative. I hope you enjoy it as much as I (and my husband) did.

Kansas City BBQ
Having lived in the Memphis and Kansas City areas, I have come to truly appreciate the culture that surrounds BBQ. There is an entire identity and etiquette that goes along with the cooking and eating of various cuts of meat. Respect and appreciation are tied to this culture – regardless of the region that you live. With that, I must say, I absolutely prefer Memphis style barbeque over Kansas City – however, Kansas City is home – so I will have to learn to love the sweet and saucy.

Garlic Potato Soup
As the description denotes, this is not a measured recipe, nor is it a step by step follow along. I’ll try to remember this, the best I can, but I make no promises. I can’t duplicate a recipe to save my life. I have written exact measurements down of things I have made in the past and still can’t duplicate them. I look up recipes and use them as an outline. Don’t have something? No problem! I’ll substitute it with whatever I have on hand. Don’t like something? Leave it out! I guess you could say I am a natural cook. I just throw things in a pot and hope for the best. I would say 90% of the time it tastes great! Sure I’ve had some epic failures, but who hasn’t even while following a recipe?

Chocolate covered secret
Just at the foot of Prague's famed "Lover's Hill" lies an inconspicuous little patisserie shop. Or rather, should we say, cukrárna, for that more fully describes its feeling, its smells and its warmth. It's unpretentious and honest. It's one of hundreds in the city. But this one is special. As soon as you walk in, you are greeted with the sweet smell of traditional Czech pastries. These are unlike ones you're likely to encounter anywhere else. They have peculiar names like little coffins or little windmills. Now, imagine yourself sitting there. You lift your foot over the small step that's so insignifcant and unexpected that it earns itself a little handwritten caution sign. You sit at a small table, the feet of which are supported with a bent cardboard beer coaster to prevent any further wobbling and your large window offers you a view of a tram track. Once in a while you will see the number 22 tram pass by. This tram provides unequivocally the most soul quenching tour of the city. You sip your Viennese coffee and nibble on a fresh crepe. This charming house has housed a number of businesses from a soapery to a wine cellar. But perhaps had things turned out a bit differently than they did, this little pastry shop would've gained the kind of global recognition it deserved. Perhaps. You can choose to believe the story that awaits you in the next several parapraphs, or you can choose to close the proverbial arched window shutters, sweep crumbs with the palm of your right hand into your left, leave the cukrárna, hop on the 22 and return to your reality. But I urge you to believe.

When I was 18, I went hunting for the last time. That was the first and only time I ever shot a deer. I didn't like it. It's not that I think hunting is wrong. On the contrary, if we are going to continue to be an omnivorous species, knowing how to hunt, dress, and cook game is important -- especially if society eventually falls apart and we no longer have 6-burner stoves, fancy French skillets, and supermarkets. But, that's a topic for a different article.
