Homemade Healthy Vegan Burgers!

As you guys probably know, over on Facebook I was making some homemade burger buns yesterday. If you want to check out the recipe, I have attached it below and it makes 4 large, or six medium burger buns...

Well, now I'd like to share a great recipe to making your own healthy, ultra-filling homemade vegan burgers and it takes a bit of effort but yes, it is very tasty. As someone who isn't actually vegan, I would definitely eat these over meat products any day of the week! π
Step 1: Your Bread and Your Patty
Now, I've already released a recipe for a good patty and so you can find it attached below!

Step 2: Your Burger Sauce!
Now I like a sweet and spicy burger sauce so here we go...
Ingredients:
200ml Vegan Mayonnaise
2x Tsp Tamarind Sauce
1x Tsp Soy Sauce
1x Tsp Ground Pepper
How To:
Get them in a bowl and use a spoon to mix them together
Step 3: Smashed Avocado!
I'm a millennial, we need some avocado in our burgers... π€
Ingredients:
1x Large Avocado
1x Beef Tomato
1x Tbsp Ground Pepper
1x Tbsp Chopped Basil
1x Tbsp Lemon Juice
1x Green Chilli
How to:
Put all of the ingredients apart from the chilli into a bowl and grab a potato masher - go to town on the damn thing! (oh, and remove the annoying skin bits you see not smashing up from the tomato)
Finely chop your chilli and sprinkle it in, mixing in with a spoon
Step 4: Homemade Coleslaw
Ingredients:
2x Small Gherkins
3x Radishes
1x Carrot
1/4x Red Cabbage
1x Stick of Celery
1x Handful of Coriander
2x Tbsp Tamarind Sauce
1x Tsp Lemon Juice
3x Tbsp Vegan Mayonnaise
How To:
Grab all of your veggies (and coriander) and grate or finely chop them into a large bowl
Add all of the wet ingredients and mix them in
Step 5: PUT IT ALL TOGETHER!
Preheat your oven to 200/C
Put your patties on a large baking tray with greaseproof paper
Half your burger buns and put them on a large baking tray with greaseproof paper (option to grate some vegan cheese atop of them is present - I did and they tasted amazing)
Put both trays in the oven, the burger buns should be in for 10-12 minutes and the patties should be in for 18-20 minutes
Once everything is out of the oven, top your burger buns (both top and bottom) with the burger sauce and place on some optional lettuce leaves (I like the purple ones!)
Then put on your coleslaw on just the bottom buns - placing your patties atop of that
Spoon on some smashed avocado and place the top of the burger bun with the little lettuce leaves on the top and skewer (optional)
Enjoy your burger!
Honestly, eating these is like having a religious experience.
Conclusion:
As I have said, I have some fairly big news coming up soon and I don't want to spoil it just yet. I think a lot of people will be happy and I hope you are. BUT, it also means I might be spending less time around here, though I hope it doesn't. I think I'm finally getting somewhere and things are starting to align. My mental health probably wasn't all that great in the last few years and now, it is improving, as is my life. Dare I say it, I might be having a good time...
