Resturant Style Chicken Dum Briyani

Chicken dum biryani is a classic Indian dish that is loved by many.

Here's a recipe for making restaurant-style chicken dum biryani:

Ingredients:

1 kg chicken, cut into pieces
500 grams basmati rice
3-4 medium-sized onions, sliced
3-4 green chillies, slit lengthwise
2 tablespoons ginger-garlic paste
1 cup thick curd
1 tablespoon red chilli powder
1 tablespoon garam masala powder
1 tablespoon biryani masala powder
1/2 teaspoon turmeric powder
Salt to taste
A few sprigs of fresh mint and coriander leaves, chopped
1/2 cup ghee
1/2 cup oil
1/4 cup milk
A pinch of saffron strands
Fried onions for garnishing






Instructions:

Rinse the rice several times in water and soak it in water for 30 minutes.


In a bowl, mix the chicken pieces with ginger-garlic paste, curd, red chilli powder, garam masala powder, biryani masala powder, turmeric powder and salt. Let it marinate for at least an hour.


In a large pot, bring enough water to boil and add the soaked rice. Cook the rice till it's about 70% done. Drain the water and keep the rice aside.

Heat ghee and oil in a heavy-bottomed pan. Add the sliced onions and green chillies and fry till the onions turn golden brown.

Add the marinated chicken to the pan and cook till the chicken is almost done.

In a separate small bowl, mix the saffron strands with milk and set aside.

In a large heavy-bottomed pot or a biryani pot, spread a layer of rice at the bottom. Add a layer of the cooked chicken on top of the rice.

Sprinkle some chopped mint and coriander leaves.

Add another layer of rice on top of the chicken. Repeat the process of layering till all the rice and chicken is used up.

Pour the saffron-infused milk on top of the layered rice. Cover the pot with a tight-fitting lid and cook on low heat for 20-25 minutes.


Once done, switch off the heat and let the biryani rest for 10 minutes before opening the lid.


Garnish with fried onions and serve hot.
