Easiest Side Dish. Ever.
A very simple side dish that goes with all your macros and off the chart on the flavor scale.
Meal prepping and planning for anything whether it be a competition or just for maintaining health can absolutely be daunting and repetitive. Setting yourself up for success by choosing foods you will love that also fit your plans is paramount ! We want no excuse to get our meals and nutrients in everyday. This recipe of classic french cuisine ' Carrots Vichy ' covers all the bases of nutrients , macros and flavor for a great side dish to any protein. Follow these simple instructions on a classical technique to create the perfect vichy every time.
Ingredients
Carrots vichy is also incredibly simple in the ingredients as well, all in all should cost you no more than $3 to make for portions enough for 7 meals.
(if using this recipe for 7 meal prep, double this recipe 3x and cook in separate batches for quality unless you have large utensils)
1lb Carrots Peeled
1 oz Unsalted Butter
1 Tsp Sugar
Pinch Salt
Pinch Pepper
Pinch Thyme Leaves at end
** Fresh Chopped Parsley as garnish if you wish
Now that all ingredients have been procured and put in place, focus on the prep of your carrots. It is a key step in this recipe that the carrots are cut into the oblique cut.This ensures that the carrots cook evenly and all pieces will be done at the same time to the same amount of tenderness. Below is an example of what oblique cut should look like, relatively uniform pieces for even cooking.
Cooking
To start the vichy bring your carrots to a saucepan and add enough water to barely cover your carrots. You're going to want to make sure that your carrots are in a even enough layer to cook properly , no mounds of veggies in the pan. At this time as well you will add in your butter , salt and sugar.
After everything is in the pan turn the heat up to high and bring to a boil,as soon as the boil starts you will turn your heat down to medium again to brin to a even simmer , do not cover and do not boil this for more than 1 minute or the vegetable will soften too much. The only step to this recipe is to keep at a simmer until all water has evaporated.
Once all moisture is evaporated and the carrots are cooked , you will lightly toss the pan to coat the tender carrots in the wonderful glaze we just created. Take one more taste test and add salt and pepper to your liking and finish up. If you'd like more seasoning or a beautiful garnish , have some thyme leaves , and fresh parsley chopped right to the top center of the dish .
Im telling you !! This is the easiest side dish.... EVER. It is so simply delicious , you might even convert a non veggie lover !! Carrots are rarely the star of the dish but in this case they steal the show , and they deserve it!
