Ingredients:

• 4 cups water

• 1 teaspoon salt

• 1 teaspoon saffron threads

• 2 tablespoons ghee

• 2 tablespoons whole cloves

• 2 bay leaves

• 2 cinnamon sticks

• 2 cardamom pods

• 1 onion, thinly sliced

• 2 tablespoons fresh cilantro, chopped

• 2 tablespoons fresh mint, chopped

• 2 tablespoons slivered almonds

• 2 tablespoons golden raisins

Instructions:

  1. In a large bowl, combine the yogurt, garam masala, coriander, cumin, turmeric, cardamom, chili powder, black pepper, and salt. Add the chicken cubes and mix until evenly coated. Set aside to marinate for at least 30 minutes.
  2. In a large pot, combine the rinsed rice, water, and salt. Bring to a boil, then reduce to a simmer and cook until the rice is tender, about 15 minutes.
  3. Meanwhile, heat the ghee in a large skillet over medium heat. Add the cloves, bay leaves, cinnamon sticks, and cardamom pods and cook for 1 minute. Add the marinated chicken and cook until lightly browned and cooked through, about 8 minutes.
  4. When the rice is cooked, add the cooked chicken to the pot and stir to combine. Cover and cook for 5 minutes.
  5. Add the onion, cilantro, mint, almonds, and raisins and stir to combine. Cover and cook for an additional 5 minutes.
  6. Serve the Dindigul Thalappakatti Chicken Biryani hot, garnished with fresh cilantro, mint, and almonds, if desired. Enjoy!
