Preparation of Thalassery Chicken Biryani

Ingredients:

  • 2 cups basmati rice
  • tablespoons vegetable oil
  • 2 large onions, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 2 large tomatoes, finely chopped
  • 2 green chilies, finely chopped
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 2 tablespoons coriander powder
  • 1 teaspoon turmeric powder
  • 2 cups chicken, boneless, cut into cubes
  • 2 tablespoons lemon juice
  • 1/2 cup chopped mint leaves
  • 1/2 cup chopped coriander leaves
  • Salt to taste
  • 2 tablespoons ghee
  • 2 bay leaves
  • 4 cloves
  • 2 cinnamon sticks
  • 2 cardamom pods
  • 2 star anise
  • Instructions:

  1. Soak the basmati rice in water for at least 30 minutes.
  2. Heat the vegetable oil in a large pot.
  3. Add the onions and fry until golden brown.
  4. Add the ginger-garlic paste and fry for a few seconds.
  5. Add the tomatoes, green chilies, red chili powder, garam masala, coriander powder, and turmeric powder. Fry for a few minutes.
  6. Add the chicken cubes, lemon juice, mint leaves, coriander leaves, and salt. Fry for a few minutes.
  7. Add the soaked basmati rice and 3 cups of water. Cover and cook on low heat for 15 minutes.
  8. Heat the ghee in a small pan. Add the bay leaves, cloves, cinnamon sticks, cardamom pods, and star anise. Fry for a few seconds.
  9. Add the fried spices to the cooked rice. Cover and cook on low heat for 10 minutes.
  10. Turn off the heat and let the biryani rest for 10 minutes.
  11. Serve hot with raita.
