Preparation of Chicken Tehari Biryani

Ingredients:

  • 2 cups Basmati Rice
  • 1 kg Chicken, cut into small pieces
  • 2 medium-sized Onions, finely chopped
  • 1 teaspoon Garlic paste
  • 1 teaspoon Ginger paste
  • 1 teaspoon Red Chilli powder
  • 1 teaspoon Coriander powder
  • 2 Green Chillies, finely chopped
  • 2 tablespoons Yogurt
  • 1/2 teaspoon Turmeric powder
  • 2 tablespoons Ghee
  • 2 tablespoons Oil
  • 2 Bay Leaves
  • 2 Cardamoms
  • 2 Cinnamon Sticks
  • 1 teaspoon Cumin Seeds
  • 1 teaspoon Garam Masala
  • Salt to taste
  • 2 tablespoons Fresh Coriander Leaves, chopped
  • 1 Lemon, sliced

Instructions:

  1. Soak the rice in water for 30 minutes.
  2. Heat the ghee and oil in a pan over medium heat.
  3. Add the bay leaves, cardamom, cinnamon sticks, cumin seeds, and fry for a few seconds.
  4. Add the onions and fry until they turn golden brown.
  5. Add the garlic and ginger paste and fry for a few more seconds.
  6. Add the chicken pieces, red chilli powder, coriander powder, turmeric powder, and salt to taste.
  7. Fry for 10 minutes or until the chicken is cooked.
  8. Add the yogurt and green chillies, and cook for a few more minutes.
  9. Add the soaked rice and mix well.
  10. Add 2 cups of water and bring to a boil.
  11. Reduce the heat and cook until the rice is done.
  12. Add the garam masala, coriander leaves, and lemon slices.
  13. Cover the pan and cook for another 5 minutes.
  14. Serve hot with raita & Enjoy!
