Spaghetti Carbonara

1.Spaghetti Carbonara

Ingredients:

spaghetti, bacon, eggs, parmesan cheese, black pepper

Directions:

Cook spaghetti according to package instructions. In a separate pan, cook bacon until crispy. In a bowl, whisk together eggs and parmesan cheese. Once spaghetti is cooked, reserve some of the pasta water and drain the rest. Add the spaghetti to the pan with the bacon and stir. Remove the pan from heat and pour in the egg and cheese mixture, stirring until the spaghetti is coated. Add some of the reserved pasta water if the sauce is too thick. Top with black pepper and serve.

2.Beef Bourguignon

Ingredients:

beef chuck, red wine, bacon, onions, carrots, garlic, beef broth, tomato paste, thyme, bay leaves, flour

Directions:

Preheat oven to 350°F. Cut the beef into bite-sized pieces and season with salt and pepper. In a Dutch oven or large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon fat in the pot. Add the beef to the pot and brown on all sides. Remove the beef and set aside. Add onions and carrots to the pot and cook until the onions are translucent. Add garlic and tomato paste and cook for another minute. Add the beef back to the pot along with the bacon and pour in the red wine and beef broth. Add thyme and bay leaves. Bring to a simmer, then cover and transfer to the oven. Cook for 2-3 hours or until the beef is tender. Before serving, thicken the sauce with flour if desired.

3.Pad Thai

Ingredients:

rice noodles, shrimp or chicken, garlic, shallots, bean sprouts, eggs, fish sauce, tamarind paste, sugar, chili flakes, peanuts, lime wedges

Directions:

Soak the rice noodles in hot water until they are softened, then drain. In a large pan, heat oil over medium-high heat. Add garlic and shallots and cook until fragrant. Add shrimp or chicken and cook until browned. Push the meat to the side and add beaten eggs to the empty space in the pan. Scramble the eggs and mix them with the meat. Add the rice noodles and stir to combine. In a separate bowl, mix together fish sauce, tamarind paste, sugar, and chili flakes. Add the sauce to the pan and stir until everything is coated. Add bean sprouts and peanuts and stir to combine. Serve with lime wedges on the side.

4.Tandoori Chicken

Ingredients:

chicken drumsticks, yogurt, lemon juice, garlic, ginger, cumin, coriander, paprika, turmeric, cayenne pepper, salt

Directions:

In a large bowl, mix together yogurt, lemon juice, minced garlic, grated ginger, cumin, coriander, paprika, turmeric, cayenne pepper, and salt. Add the chicken drumsticks and coat them with the marinade. Cover the bowl and refrigerate for at least 4 hours, or overnight. Preheat the oven to 450°F. Line a baking sheet with foil and place the chicken drumsticks on the sheet. Bake for 20-25 minutes or until the chicken is cooked through. Serve with rice and naan bread.

5.Ratatouille

Ingredients:

eggplant, zucchini, bell peppers, onions, garlic, tomatoes, thyme, basil, olive oil

Directions:

Preheat the oven to 375°F. Cut the eggplant, zucchini, and bell peppers into bite-sized pieces. Slice the onions and mince the garlic. In a large baking dish, layer the vegetables in a pattern, seasoning each layer with salt, pepper, thyme, and basil. Pour olive oil over the vegetables. Cut the tomatoes into thin slices and layer them on top of the vegetables. Cover the dish with foil and bake for 45-50 minute
