19 No Nonsense Recipes

You are standing in your kitchen feeling hungry. You are unsure of what to cook and have some pretty random ingredients on hand!What do you do?

I admit that I don't really enjoy cooking all that much. However, when I do, I love to be creative. It must be the artist side of me that brings out my love for mixing different ingredients together.

I have created a few recipes over the last year and I am eager to share them with all of you. I hope that you will enjoy these delicious recipes as much as I do!

1. Fresh to Death Pad Thai

What you will need:

*This recipe requires a vegetable Spiralizer (ex. Starfrit Spiralizer, sold online or at Walmart)

Or - use thick rice noodles (cooked)

  • 1 spiralized sweet potato
  • 1 spiralized avocado
  • Soft goat cheese
  • Crushed peanuts (unsalted)
  • A pinch of sea salt
  • A drizzle of low sodium soy sauce
  • Squeezed lemon juice

2. Nom Nom Noodle Dish

What you will need:

  • Spaghetti (cooked)
  • Parmesan cheese (lots of it!)
  • Very large spoonful of margarine
  • A pinch of sea salt
  • Sautéed sweet onion (saucepan with water)
  • Sautéed cut mushrooms (same as above)

3. Fab-o Beef Pie

What you will need:

  • Free range all-natural beef (cook in frying pan)
  • Caramelized yellow onion (cook in saucepan)
  • Homemade yellow or sweet mashed potatoes (boil potatoes and mash with a dash of milk and butter)
  • 1 package of pork roast gravy (follow package instructions and pour over top before baking)
  • Put all ingredients together (except potatoes - spread those on the top)
  • Put all ingredients in a small casserole dish and bake at 400 degrees until golden on the top

4. Amazing Avocado Pasta

What you will need:

  • 1 avocado
  • 1 squeezed lemon
  • Cooked noodles of choice (boil these in a pot of water to desired consistency)
  • Cook and add sliced chicken for added protein (optional)

5. Scrumdiddlyumptious Roasted Chicken Wrap

What you will need:

  • Fresh sliced roasted chicken
  • Kraft Honey Mustard dressing (spread on tortilla)
  • 1 Soft tortilla
  • 1 Sliced tomato
  • Iceberg lettuce

6. Sassy Sautéed Apple Dessert

What you will need:

  • Thinly sliced apples (no peel)
  • 2 tbsp of margarine
  • Small block of maple sugar
  • 3 tbsp of brown sugar
  • Cook on low heat in a saucepan

7. Not a Pro Pho Stir-Fry

What you will need:

  • ½ box of Kraft Pho broth (bring to boil and pour over noodles & veggies)
  • Korean sweet potato noodles (boil in pot and cook thoroughly)
  • Mixed fresh diced veggies (cook in with noodles, add half way through)

8. Pretty Pineapple Spaghetti

What you will need:

  • 1 can of crushed tomatoes (add to pot)
  • 1 can of diced pineapple (add to pot)
  • Ragu tomato sauce (add to pot)
  • 1 can of tomato soup (add to pot)
  • A pinch of sea salt and splash of vegetable oil (to avoid over boiling)
  • Spaghetti (cook separately)

9. Lazy Day - Just Add Water Loaf

What you will need:

  • 'Just add water' blueberry muffin mix
  • 'Just add water' biscuit mix
  • Mix both mixes together
  • Add ½ cup of brown sugar on top of mixes
  • Add a handful of fresh cranberries into the mix (optional)

10. Not So Average Pasta Salad

What you will need:

  • Mash up a few cooked sweet potatoes
  • Fusilli pasta (bring to boil and cook to desired texture)
  • Soft goat cheese
  • Dried cranberries
  • Diced apple

11. Cool Kale Stuffed Wrap

What you will need:

  • Fresh washed kale
  • Soft tortilla
  • 1 Avocado (mashed)
  • 1 Sweet potato (mashed)
  • A spoon full of mayo (organic if preferred)
  • A pinch of sea salt

12. Wish I Was In Venice - Italian Soup

What you will need:

  • ½ box of free range chicken broth (boil and let simmer)
  • Fresh hamburger (roll into little meatballs and cook thoroughly)
  • Pinch of sea salt
  • Acini de pepe pasta (bring to boil)
  • Optional: sprinkle parmesan cheese on top for a hearty flavor

13. Mouthwatering Cheesy Corn Bread

*Grease pan thoroughly*

Oven Temperature: Approx. 300 FCooking Time: Approx. 25 mins in a conventional oven (or until golden around the edges)

What you will need:

  • ¼ cup of cornmeal
  • 2 eggs (or 6 tbsp of fat-free mayo for a healthier option)
  • ⅔ cup of milk (1% or skim)
  • ½ cup of soft margarine (or add baking soda for a healthier option)
  • 1½ cup of Bisquick
  • 6 spoons of sugar
  • 1 cup of grated cheddar cheese (a delicious add-in ingredient)

14. Truly Special Sweet Potato Fries

* For this recipe, you will need a spiralizer

Oven Temperature: Approx. 300 FCooking Time: Bake on flat baking sheet for approx. 15 mins

What you will need:

  • 1 large sweet potato (washed and unpeeled)
  • Pinch of Himalayan or sea salt
  • Splash of vegetable oil or corn oil

15. Maple, Cranberry & Kale, Oh My! Salad

What you will need:

  • Maple balsamic dressing
  • Fresh washed organic kale
  • Dried cranberries
  • Diced apple into small cubes
  • Soft goat cheese

16. My Celebration Sandwich/Wrap

What you will need:

  • 2 slices of rye bread (OR) 5-grains tortilla
  • 1 tbsp of mayo
  • 3 tbsp of canned cranberry sauce
  • Fresh cut turkey
  • Thinly sliced peeled cucumber
  • A handful of (optional) crushed walnuts

17. DIY Delicious Iced Coffee

What you will need:

  • Nescafe Iced Java Cappuccino Coffee Syrup (add a few squirts)
  • Milk, regular or soy (approx. 1/2 cup)
  • Caramel Sauce-just add a few squirts (Paleo: sugar-free, dairy-free caramel sauce)
  • Ice cubes (approx. a handful)
  • Optional ingredient: (a tablespoon of espresso mix)

18. Out Of This World Cinnamon Buns

Oven Temp. 375 FCooking Time: Bake approx. 20-35 mins until golden brown around edges

What you will need:

  • 2 tbsp of maple syrup
  • ½ cup of Cinnamon sugar
  • Brown sugar (spread on top)
  • 2 tbsp in mix Margarine
  • 1 tbsp of margarine (spread on top half way as cooking)
  • 3 cups of Bisquick mix
  • ½ cup of 1% milk (or skim milk)
  • Handful of golden raisins spread out on top of buns prior to cooking
  • Roll out into on greased baking sheet

19. No Nonsense Stir-Fry

What you will need:

  • 1 avocado (peel, remove core and mash into sweet potato)
  • 1 large sweet potato (peeled, cooked and mashed)
  • Half an onion (diced). Bring to boil in pan
  • Half a yellow pepper (diced). Bring to boil in pan
  • Jasmine rice (cook to desired consistency)
  • Mix all ingredients together and enjoy!
