packed tightly together; 2 cloves

garlic; 1/2 cup pine nuts (pine

kernels), toasted until goldenbrown; 3 tablespoons olive oil; salt

and pepper to taste

Preheat the oven to 425°F.

In a large bowl mix together flour,

salt and pepper until combined

then add butter cut into cubes

and mix again until it resembles

breadcrumbs (or use a pastry

blender).Place chicken breasts in plastic

bag with 1 tbsp of oil; shake to

coat evenly then dredge in

seasoned flour mixture pressing

lightly so that all sides are coated

but not too much! Place on baking

tray sprayed with nonstick spray (I

like parchment paper) or lined

with foil sprayed with nonstick

spray; bake for 20 mins until

cooked through but still moist

inside when prodded gently

between fingers – don't overcook

as this can cause them to dry out

before they're done cooking
