Preparation of Thalassery Mutton Biriyani
Ingredients:
- 2 cups of Basmati rice
- 1/2 kg Mutton
- Onion
- 1 tablespoon Ginger-garlic paste
- Green chillies
- 2 tablespoons Coriander powder
- 1 teaspoon Turmeric powder
- 1 teaspoon Garam Masala
- 2 tablespoons Chilli powder
- 1 teaspoon Pepper powder
- 2 tablespoons Lime juice
- 2 tablespoons Coconut oil
- 2 tablespoons Ghee
- 1/2 cup Cashew nuts
- 1/2 cup Raisins
- 2 Bay leaves
- 2 Cardamom pods
- 2 Cinnamon sticks
- 2 Cloves
- 2 tablespoons Coriander leaves
- Salt, to taste
Instructions:
- Soak the basmati rice in water for 30 minutes.
- Heat the coconut oil in a large pan. Add the bay leaves, cardamom pods, cinnamon sticks, cloves, and onion. Saute for a few minutes.
- Add the ginger-garlic paste and green chillies. Saute for a few more minutes.
- Add the mutton and saute until it is browned.
- Add the coriander powder, turmeric powder, garam masala, chilli powder, and pepper powder. Mix everything together and cook for a few minutes.
- Add the lime juice and season with salt. Cook for a few more minutes.
- Add the basmati rice and mix everything together.
- Add the ghee and mix everything together.
- Add the cashew nuts and raisins. Mix everything together.
- Add 2 cups of water and bring to a boil.
- Cover the pan and reduce the heat to low. Simmer for 25 minutes or until the rice is cooked.
- Garnish with coriander leaves.
- Serve hot.
