Preparation of Thalassery Mutton Biriyani

Ingredients:

  • 2 cups of Basmati rice
  • 1/2 kg Mutton
  • Onion
  • 1 tablespoon Ginger-garlic paste
  • Green chillies
  • 2 tablespoons Coriander powder
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Garam Masala
  • 2 tablespoons Chilli powder
  • 1 teaspoon Pepper powder
  • 2 tablespoons Lime juice
  • 2 tablespoons Coconut oil
  • 2 tablespoons Ghee
  • 1/2 cup Cashew nuts
  • 1/2 cup Raisins
  • 2 Bay leaves
  • 2 Cardamom pods
  • 2 Cinnamon sticks
  • 2 Cloves
  • 2 tablespoons Coriander leaves
  • Salt, to taste

Instructions:

  1. Soak the basmati rice in water for 30 minutes.
  2. Heat the coconut oil in a large pan. Add the bay leaves, cardamom pods, cinnamon sticks, cloves, and onion. Saute for a few minutes.
  3. Add the ginger-garlic paste and green chillies. Saute for a few more minutes.
  4. Add the mutton and saute until it is browned.
  5. Add the coriander powder, turmeric powder, garam masala, chilli powder, and pepper powder. Mix everything together and cook for a few minutes.
  6. Add the lime juice and season with salt. Cook for a few more minutes.
  7. Add the basmati rice and mix everything together.
  8. Add the ghee and mix everything together.
  9. Add the cashew nuts and raisins. Mix everything together.
  10. Add 2 cups of water and bring to a boil.
  11. Cover the pan and reduce the heat to low. Simmer for 25 minutes or until the rice is cooked.
  12. Garnish with coriander leaves.
  13. Serve hot.
