Let's face it: most universities have gross dining halls. Often they'll have hockey puck burgers and pizza that resembles cardboard. If you're lucky, your dining hall might have a salad bar that isn't crawling with germs. This can be a rude awakening after having your mom pack you lunch for your entire childhood. Suddenly, you have to figure out how to fend for yourself and make your on food (unless you want to risk your life in the dining hall). To make things even more difficult, freshmen often don't have easy access to a full kitchen, so they're stuck using only their microwave and mini-fridge.

Specialist camel butchers prepare the meat, with the hump as the most prized portion of the animal; similar to the back strap cut on an elk. Contrary to what many people believe, the camel hump is essentially a storehouse of fat; not a water bladder. Described as a cross between lamb and beef, young camel meat in no way tastes like chicken.

For my first post in the new "Cuisine Spotlight" series, I will be focusing on my favorite dish here in Colombia, which is known as the "Bandeja Paisa." Flavorful, unique, and made up of different food groups, "Bandeja Paisa" is a conglomeration of the best of Colombian cuisine, specifically of the Antioquia region. You can tell by its name that this popular food dish has its origins with the Paisas, who are the inhabitants of Department of Antioquia. If you translated "Bandeja Paisa" from Spanish to English, it would roughly mean "Paisa Platter."
