Preparation of Sindhi Mutton Biryani

Ingredients:

  • 1 kg mutton
  • 2 cups basmati rice

  • 4 green chillies, finely chopped
  • 2 tablespoons ginger-garlic paste
  • 2 tablespoons red chilli powder
  • 2 teaspoons coriander powder
  • 1 teaspoon garam masala
  • 2 tablespoons lemon juice
  • 1 teaspoon turmeric powder
  • 3 tablespoons ghee
  • 3 tablespoons oil
  • 2 black cardamoms
  • 3 cloves
  • 3 green cardamoms
  • 2 cinnamon sticks
  • 2 bay leaves
  • 2 tablespoons chopped fresh mint leaves
  • 2 tablespoons chopped fresh coriander leaves
  • 2 tablespoons chopped fresh dill leaves
  • 1 cup yogurt
  • Salt to taste

Instructions:

  1. Wash the mutton and marinate with yogurt, red chilli powder, coriander powder, garam masala, turmeric powder, ginger-garlic paste, lemon juice and salt. Set aside for at least 2 hours.
  2. Heat the ghee and oil in a large pot. Add the cardamom, cloves, cinnamon, bay leaves and onions. Fry until the onions are golden brown.
  3. Add the marinated mutton and fry until it is browned.
  4. Add the green chillies, garlic, mint, coriander and dill leaves and fry for a few minutes.
  5. Add the rice and fry for a few minutes.
  6. Add enough water to cover the rice and the mutton. Bring to a boil, reduce the heat and simmer for 20-25 minutes or until the rice and mutton are cooked.
  7. Serve hot with raita or salad.
