① Wash the rice and add 4/3 cups of water (adjust as needed for rice condition). Cook with a rice cooker.

② Cut the spam into six pieces. Use three pieces for now and tightly wrap and store the rest in the freezer for later.

If you are sensitive to salt, cut the spam thiner.

③ Chop the green onion. Use half of it and save the rest for miso soup or other dishes.

④ Heat a pan and add the spams when it's warm. Cook over medium heat until the surface is light browned and crispy. Flip them a couple of times to prevent burning.

⑤ When the rice is ready, add dried bonito, green onion, and optional chirimen jako for a calcium boost. Add soy sauce and mix well.

⑥ Shape the rice into three Tawara-shaped balls. Make a slight dent on the top and drizzle with Unagi No Tare.

⑦ Cut the nori into three pieces.

⑧ Place a cooked spam slice on each rice ball and wrap them with nori.
