What is a Sous Vide? And How it Changed Cooking in Our Home
Let me start this article by informing you that I have no cooking experience and neither does my fiancé. In a modern Canadian society its not uncommon for people our age (mid 20's) to be helpless in the kitchen, when there are so many take-out options readily available to us. Not to mention one of our other challenges was time. Him being a general manager of franchise and myself owning a small business most the time we are two passing ships, rarely home at the same time, and when we are neither of us feels so inclined to volunteer hours of our day off to slaving in the kitchen, when there is so much else that needs doing around the house. We would try once and a while to cook up something special but most efforts were futile and ended with a call to our local pizza place or a frozen lasagna.

To the Avocado
Oh, avocados! You have been in my orbit for most of my life, though my feelings towards you have changed. I remember our first encounter: me, a little girl, peering over the kitchen counter at my mother's lunch time creation. You: spread evenly over a piece of bread, tucked in gently under a soft bed of sprouts. I am not going to lie to you, avocados. Observing your bumpy skin and your green goo-ey inside, I did not share my mother's enthusiastic yum!

The One with the Dip
My family has never really cared much for sports (watching or playing), but boy, do we enjoy watching expensive commercials while munching on salty treats. When I was a child we would always go for the quick and easy store bought French onion dip with plain potato chips. Pairing this with different bologna, cheeses, and crackers created a salty bounty of yumminess. As my sisters and I got older and began exploring different culinary avenues than what our parents traditionally stuffed us with, we began crafting our own dips. One of my all time favorite dips is a spinach dip paired with bread or crackers. I prefer it cold with the crunch of water chestnuts and the tang of a vegetable soup mixture of dried seasonings. For a more sophisticated taste, I like to make a roasted red pepper dip. Once upon a time I stumbled upon the recipe in one of my first cookbooks. Hello, adulting. Ranch or veggie dips with carrots or salsa (sometimes sweet or spicy) have always been classics as well. Fresh fruit such as strawberries or pineapple dipped in a whipped topping always satisfies that pesky sweet tooth (not to mention a glass or two of wine).

Home Made cooked Egg Kosha with Mom Love from Nanighar
Egg kosha is a traditional Bengali delicacy. It is a spicy egg curry which is prepared by cooking boiled eggs over low heat until the curry becomes thick, dark and velvety. This is truly a mouth watering dish and usually enjoyed with warm white rice, relaxed on a Sunday afternoon for lunch. This heavy and rich curry leaves you full by the stomach but never by your heart and you keep asking for more, licking your fingers. The authenticity of this dish is best enjoyed when made by a mother in a traditional bengali household in her kitchen. The true flavors of this rich dish are only reflected a 100% through a mother’s cooking.
