Aruban Penne Pasta
I was fortunate enough to be sent to Aruba on a conservation-education trip back in the 1990s. Uncharacteristically, I did not do much “homework” on Aruba and was surprised by it’s desert feel. I was expecting tropical lush Isle. What I got was a lot of scrub brush and scrabble.

What a Fish Means
I love seafood ever since I was a little kid ordering shrimp cocktail off the kid’s menu on our annual family beach vacation. But the one fish that’s been the most impactful on me, in addition to being one of my favorite meals, has been salmon. I didn’t really understand salmon until I moved from the East Coast to Seattle, in the middle of the Pacific Northwest. Before moving here, salmon was just another (delicious) entrée. But the Pacific Northwest-from California all the way up to Alaska-is where fresh salmon comes from. And it’s also one of the most important fish in the region-scientifically, economically, politically, and culturally.

Champei's Amok. Top Story - July 2021.
When I was eighteen, I was in the peak of my youth and having just been freed from the clasps of school, I packed a bag and lived solo in Cambodia for six months. The first moments that I spent in Cambodia, from stepping off the plane to sitting on the gutter with a lady who had no teeth but the biggest smile eating amok are the clearest in my memory.

Which is the best Greek Cafe in the U.K? and why is it “Think Pastry” in Edinburgh?
Because it exceeds expectations of what a Greek cafe is. The best Greek cafe in the U.K needs to have the best Freddo Espresso. Think Pastry has exactly that. It’s intense but not bitter.It’s pleasing and aromatic and made with a lot of love.

Garlicky Green Beans with Nuts & Raisins. Top Story - July 2021.
One of the absolutely best parts of traveling, is newfound food! There is always something novel to try—especially when you travel outside of your country of origin. I’ve eaten green beans all my life, but growing up in the USA, it was always in just two boring ways: 1) Boiled with bacon, to flavor them; or 2) Slathered with mushroom soup, cheese, and dried onions in a green been casserole. It was only after I first moved to Australia (as an expatriate for a while), that during supper at the home of some hospitable mates (friends), they excited my taste buds with green beans as I had never before experienced them! Thus, I call this dish: “Australian Green Beans” (even though I suspect it probably originated somewhere in Africa). Who knew green beans could be so exciting? It’s an easy dish to make, too.

When on an expedition to Borneo at the age of sixteen, and having been a rather fussy eater growing up, it’s not surprising that I experienced many foods I'd never had before. To be honest, there were times I struggled with the new cuisine - and I never quite got the hang of having noodles for breakfast. But there were some real joys in experiencing the new foods I encountered there.
