Travel Cuisine: The National Dish of Austria-Weiner Schnitzel Often the simplest food pleasures are surprisingly the best, and no better case could be made than for Austria’s nationally recognized Weiner Schnitzel. The ultimate in comfort foods, Weiner Schnitzel is merely a tender veal cutlet, pounded thin, lightly seasoned, coated with breadcrumbs, and quickly fried in butter and a bit of oil. Add a touch of fresh lemon upon serving and you have gourmet class perfection on a plate.

That's where the Love is
He's five years old and he’s looking at my hands while we’re waiting in line and he asks, “Why are your hands a different color than mine?” And I tell him that people come from many different places with all sorts of shades and colors and faces and mine come from islands where people are the color of chestnuts and sweet coffee, but I also come from people who are the color of ginger root and sand and from people who are the color of mushrooms and cream, and they’re all beautiful and together they made me.*

My Chinese Food Tour
About twenty years ago I went on a package tour of China, starting in Beijing and then heading south through various cities, finishing in Hong Kong. The sights were amazing, and it was incredibly interesting, but for me, the best thing about the tour was the food.

Nam Jim Jaew
In my twenties I took a spontaneous trip to Thailand. I boarded the plane to Guangzhou, China, and after a lengthy layover, hopped on the next flight to Bangkok. After what felt like innumerable hours spent in burdensome lineups and uncomfortable plane seats, I arrived around midnight; tired, sore, and very hungry.

Best NZ (or AUS) Dessert
Back in 2015 I travelled New Zealand for eight months. I spent most of the trip WWOOFing (Willing Workers on Organic Farms) around the North Island. Of all the farms I visited, my favourite had the perfect view of Mt Taranaki and was primarily off the grid. The family was incredibly welcoming. I spent my morning helping feed the animals (mostly guinea pigs being raised as pets but also chickens and ducks), checking cows and sheep, and weeding the garden that was designed using principles of permaculture.

New York, 2017
It was in the Autumn November 2017 when me and my dad travelled on a seven and a half hour flight from Manchester Airport, to the city that never sleeps that would be New York City. We arrived at John F. Kennedy International Airport around the evening and already it rained and the clouds quite dull as we would be staying here for about five days. But we were just happy that we landed at a good particular time, eventually when we booked a taxi we were amazed and thrilled at the sight seeing's in the yellow cab around the city centre after crossing Brooklyn Bridge, we even had to lower our heads down when we gazed out the cab windows to see how high the city streets and tower buildings were as we've never come across higher ones like in London before. The city was virtually almost twice the size as England's capital but with taller skyscrapers and wider busier routes.

Getting the most(y) out of rösti
Is it a hashbrown? A hushpuppy? Risotto? Is it a side dish? Breakfast? Late-night snack? Whatever this strange Swiss dish was sitting on my plate, it was begging to be consumed. It was crispy golden brown, fried to perfection and oozing with grease and cheese. “Rösti,” said the smiling Swiss waitress, observing me indulgently, “eat it. It’s good.”

Poppin' Pork: I Learned to Make Tonkatsu During the Lockdown
The COVID lockdown wasn’t so terrible. At least, not for me. Not at first. Sure, the pandemic was terrible, but I would be okay. After all, I was an introvert. I was wired for this sort of thing. I would only leave the house for essential reasons like picking up groceries or prescriptions. I would have time without interruptions to actually do my job and write. And when I was done writing,I had plenty of video games to tide me over until this whole thing ended as quickly as it came.
