SUMMER of FOOD LOVE
Sunshine, loud music, laughter, water play, and FOOD….it is Summer time! Now I am not sure where you are from, but this Seattle girl LOVES summer. Western Washington does not get many warm sunny days, but when we do…IT IS MAGICAL. The mountains are out soaking up the sun for all the wildlife. The waters are piercing blue with a nice breeze, and the happiness on people’s faces is priceless, for we are not running inside because it is raining or cold. Summer brings out a different side of our population, and the food….oh the food. Going outside you will smell the BBQ. Going to the markets you will smell all the different ethnic foods. Strolling Pike Place the fish market will be very prominent, none the less the fresh fish is DIVINE. For me though, the best summer food is made in my very own kitchen. I am talking about mouth-watering homemade sandwiches. Savory pasta and quinoa salads. Freshly baked desserts to enjoy after grilling some kabobs and vegan burgers. I know this does not appeal to all, but you haven’t had my cooking yet.

THE BEST TUNA MELT
The perfect tuna melt If you’ve never tried a tuna melt, you’re missing out. This sandwich is a perfect combination of salty with a bit of sweetness. The tuna is of course made with mayonnaise and mustard; I’m not sure if anyone else puts relish on their tuna, but I sure do(this is what makes it sweet). Before you can put the tuna on your beautiful Natural Owl butter bread you have to make sure you make it crispy and cheesy. Make sure you have a pan on a stove with either a little bit of butter, mayonnaise or any oil of your choice; make sure it spreads all over the pan. Get a slice of bread and plop it onto the pan; as the bread is toasting, get the cheese out. When one of the sides of the bread is done and toasted, flip it over. Put your cheese on the toasted part of the sandwich; before taking the whole piece of bread out of the pan let the bread toast, and cheese melt. When that part of the process is finished take it out. (If you’re making two tuna melts, do that to another piece of bread). While the other piece of bread is on the pan, make sure you put two other pieces of bread in an actual toaster. Most of the time I add bacon to my sandwiches to give it more flavor. (if you’re not a fan of bacon you don’t have to worry about this next step.)

The best summer treat
I’d like to warn everyone, that this post is filled with ice cream slander. For the life of me, I have never truly understood why ice cream seems to be the frozen treat of summer. I stand relatively alone, apparently, in the sentiment that, on a hot day the last thing on my mind is a bowl of dairy. Some research would even suggest the combination of fat, protein, and sugar does more to heat you than cool you off on a hot day( ha!). And I get it, popsicles while delicious in their own right can be messy and usually leave you wanting more. So what’s the alternative? What sweet frozen delicacy can satisfy you on a hot day like (-better than) ice cream? Walk into the city of Philadelphia and every resident will have the same answer. Water ice.

Aunt Sue's Macaroni Salad . Top Story - June 2022.
There were never any paparazzi lurking in the bushes but Aunt Sue still referred to her signature BBQ dish as her “World Famous Macaroni Salad”. The Best Thing About Summer
