- 1 tablespoon red chili powder

- 1 tablespoon garam masala powder

- 1 teaspoon turmeric powder

- Salt to taste

- 1/2 cup vegetable oil

- Coriander leaves for garnishing

Method:

1. In a large deep pan, heat oil and fry the onions until they are golden brown.

2. Add ginger-garlic paste and fry for 1-2 minutes.

3. Add chopped tomatoes and green chillies, and fry until tomatoes are soft and mushy.

4. Add coriander powder, cumin powder, red chilli powder, turmeric powder, and garam masala powder. Mix well.

5. Add the mutton pieces and mix well until the meat is coated with the spice mixture.

6. Fry the mutton pieces until they are browned.

7. Add 1 cup of water and salt to taste. Mix well.

8. Cover the pan with a lid and cook on medium-low heat for 40-50 minutes or until the mutton is tender and the gravy has thickened.

9. Keep stirring occasionally to ensure that the mutton pieces are cooked evenly.

10. Once the mutton is cooked, garnish with coriander leaves and serve hot with steamed rice or flatbreads like nan or chapati.

6. Allow the pulao to cook on low flame for 15-20 minutes or until all the water is absorbed. Turn off the flame and let the pulao rest for 5-10 minutes before serving.

Your delicious and fragrant pulao is ready to serve. You can garnish it with fried onions, coriander leaves or mint leaves. If you prefer meat in your pulao, you can add cooked chicken or lamb.
