Step 3 – Draining the Whey:
Once the milk has curdled, use a muslin cloth or a cheesecloth to strain the chenna. Place the cloth over a sieve or a colander and pour the milk mixture over it. Allow the whey to drain and leave for 15-20 minutes until all the whey has drained off.

Step 4 – Kneading Chenna:
Now you can see the chenna in the cloth. Rinse it under cold running water to remove the lemon flavor. Gather the cloth's edges and tie a knot to squeeze out all the water from the chenna. Now transfer it to a large plate and knead it for 5-7 minutes until it becomes smooth.

Step 5 – Making Sandesh:
Divide the chenna into small balls and flatten them with your palms. Heat a non-stick pan and add a little ghee. Place the flattened chenna patty in the pan and cook for 2 to 3 minutes. Flip the patty and cook the other side as well. Once both sides turn light brown, remove from heat and let it cool.

Step 6 – Adding Sugar:
In a separate pan, add the powdered sugar and a dash of cardamom powder and heat it over low flame. When the sugar melts, add the cooked chenna patties and mix well.

Step 7 – Shaping Sandesh:
Turn off the heat and let the mixture cool down. Once it cools down, shape them into small balls or any shape you desire. You can use a cookie cutter to make Sandesh in heart, star or any shape. Garnish it with a slice of pista, kaju, or any dry fruits.

Step 8 – Chill and Serve:
Refrigerate the Sandesh for at least 1 hour before serving. Serve chilled and enjoy the delicious and scrumptious Sandesh with your family and friends.
