art ni is an aromatic and delicious rice dish that originated in the Indian subcontinent. It is a one-pot dish consisting of rice, meat or vegetables, and various spices. Biryani is a dish that requires patience, time, and careful attention to detail, but the end result is well worth the effort.

Ingredients:

For the Rice:

- 2 cups basmati rice

- 4 cups water

- 1 tsp salt

- 2 bay leaves

- 2-3 green cardamom pods

- 1 cinnamon stick

For the Meat:

- 1 lb. bone-in chicken

- 2 tbsp. ghee or oil

- 1 large onion, thinly sliced

- 1 tbsp. ginger paste

- 1 tbsp. garlic paste

- 1 tsp. cumin powder

- 1 tsp. coriander powder

- 1 tsp. garam masala powder

- 1 tsp. turmeric powder

- 1 tsp. red chili powder

- Salt, to taste

- ½ cup plain yogurt

For Layering:

- 1 large onion, thinly sliced

- 2 tbsp. ghee or oil

- 1 tsp. biryani masala powder

- 2 tbsp. chopped cilantro leaves

- 1 tbsp. chopped mint leaves

- Fried onions, for garnish

- Raisins, for garnish

- Almonds, for garnish

Instructions:

For the rice:

1. Rinse the rice in cold water until the water runs clear. Soak the rice in room temperature water for at least 30 minutes.

2. Heat the water in a large pot until it starts to boil. Add in the salt, bay leaves, cardamom pods, and cinnamon stick.

3. Drain the soaked rice and add it to the pot. Stir to combine and bring the water back to a boil.

4. Once boiling, reduce the heat to low and cover the pot with a tight-fitting lid. Cook for 15-20 minutes or until the water has been completely absorbed and the rice is tender.

5. Remove the pot from heat and let it sit, covered, for 5-10 minutes. Fluff the rice with a fork and set aside.

For the meat:

1. In a large bowl, combine the chicken, ginger paste, garlic paste, cumin powder, coriander powder, garam masala powder, turmeric powder, red chili powder, salt, and yogurt. Mix well until the chicken is coated in the marinade.

2. Heat the ghee or oil in a large pot over medium-high heat. Add in the sliced onions and sauté until the onions are golden brown.

3. Add in the marinated chicken and cook until browned on all sides.

4. Reduce the heat to low and cover the pot with a tight-fitting lid. Cook for 15-20 minutes or until the chicken is completely cooked through.

5. Remove the lid and cook for an additional 5-7 minutes until the gravy has thickened.

For Layering:

1. In a separate pan, heat the ghee or oil over medium heat. Add in the sliced onions and sauté until golden brown.

2. Add in the biryani masala powder and cook for another minute.

3. In a large pot, layer the cooked rice and chicken masala, starting with a layer of rice then a layer of chicken, and continue this process until all the cooked rice and chicken masala have been used up.

4. Drizzle the fried onion mixture over the top of the layered biryani. Sprinkle with chopped cilantro and mint leaves.

5. Cover the pot with a tight-fitting lid and place it over low heat for 10-15 minutes to allow the flavors to blend.

6. Once done, garnish with fried onions, raisins, and almonds.
