  2. Add the potatoes, vegetable broth, and almond milk to the pot. Bring to a boil, then reduce the heat to a simmer. Simmer until the potatoes are tender, about 15 minutes.
  3. Add the thyme, salt and pepper to the soup, and simmer for an additional 5 minutes.
  4. Carefully transfer the soup to a blender and blend until smooth.
  5. Return the soup to the pot and bring to a simmer. Season to taste with additional salt and pepper, if desired.
  6. Serve hot, garnished with parsley, if desired.
