Chicken samosas are a popular Indian snack food that consists of a flaky pastry filled with a spiced chicken mixture. The filling is usually made with ground chicken, onions, spices, and herbs. Chicken samosas can be served as an appetizer or a snack, and are often accompanied by chutney or a dipping sauce.

Make Chicken Samosa

Ingredients

  • 1 1/2 cups all-purpose flour
  • 3 tablespoons oil
  • 1 teaspoon salt
  • Water, as needed
  • 2 tablespoons oil
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • 2 green chilies, minced
  • 1/2 cup onion, minced
  • 1/2 cup tomato, minced
  • 2 cups cooked, shredded chicken
  • 2 tablespoons cilantro, chopped
  • 2 tablespoons mint leaves, chopped
  • Oil, for deep-frying

Instructions

  1. 1. To make the dough: In a large bowl, combine the flour, oil, and salt. Gradually add water and knead until you have a soft, pliable dough. Cover and set aside for 30 minutes.
  2. To make the filling: Heat the oil in a large skillet over medium heat. Add the cumin and mustard seeds and cook until they start to sizzle. Add the coriander, turmeric, and garam masala and stir-fry for a few seconds.
  3. Add the green chilies, onion, and tomato and sauté for about 2 minutes. Add the chicken, cilantro, and mint leaves and cook for 2-3 minutes. Remove from the heat and set aside.
  4. To assemble the samosas: Divide the dough into 8 equal pieces. Roll each piece into a 5-inch circle. Cut each circle in half.
  5. Take one half and moisten the edges with water. Fold the circle in half to make a semi-circle. Fill with 2 tablespoons of the filling.
  6. Moisten the edges again and pinch them together to seal the samosa. Repeat with the remaining dough and filling.
  7. Heat oil in a deep fryer or heavy-bottomed pot to 350 degrees F. Working in batches, carefully add the samosas to the hot oil and fry until golden brown and crisp, about 4-5 minutes.
  8. Remove the samosas from the oil and drain on paper towels.

Serve hot!.

Make Spicy Chutney

Ingredients

  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 2 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 tablespoons fresh ginger, minced
  • 2 green chilies, chopped
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 2 tablespoons tomato paste
  • 2 tablespoons tamarind paste
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint, chopped
  • Salt and pepper to taste

Instructions

  1. Heat the oil in a medium saucepan over medium heat.
  2. Add the cumin seeds and cook for 1 minute.
  3. Add the garlic, onion, ginger, and chilies and cook for 2 to 3 minutes, or until the onion is translucent.
  4. Add the turmeric, cumin, coriander, garam masala, tomato paste, and tamarind paste and cook for another 2 to 3 minutes.
  5. Add the cilantro, mint, salt, and pepper and cook for 1 minute.
  6. Remove from heat and let cool.
  7. Transfer the mixture to a food processor or blender and blend until smooth.
  8. Transfer to an airtight container and store in the refrigerator for up to 1 week.
