Ingredients:

Marination:

1 kg Chicken (boneless or with bones)

1 cup plain yogurt

1 tablespoon ginger paste or powder

1 tablespoon crushed garlic

1 teaspoon red chilli powder

1 tablespoon lemon juice

Salt to taste

Main Curry:

Oil

Onions, finely chopped

3 green chilies, chopped

Crushed Garlic 1 tbsp

2 tomatoes, chopped

Chopped, boiled and fried potatoes

1 tablespoon curry powder

1 cup coconut milk

1/2 cup sour cream

Fresh cilantro for garnish

Salt to taste

Instructions:

Preparing the Chicken Marinade:

While my chicken has bones, the marination process remains the key to enhancing its flavors. In a mixing bowl, blend together the plain yogurt, ginger paste or powder, garlic paste, and the medley of spices, ensuring they coat the chicken pieces thoroughly. Allow the chicken to marinate, ideally overnight, to absorb the essence of these aromatic elements, promising a burst of flavor with each bite.

In a mixing bowl, blend together unflavored yogurt, powdered ginger, crushed garlic, turmeric, red chili powder, lemon juice, and salt.

Coat the chicken pieces thoroughly in the marinade mixture.

Cover the bowl containing the chicken coated with spices and refrigerate for at least 2 hours or preferably overnight for the flavors to infuse.

Cooking the Creamy Chicken Curry:

Heat vegetable oil in a large pan over medium heat. Saute crushed garlic, chopped green chilies, and chopped onions. In another pan fry boiled potatoes

Add cumin powder and coriander powder.

Add the marinated chicken to the pan. Cook until the chicken achieves a golden brown hue on all sides.

Follow this with the addition of curry powder, diced tomatoes and fried potatoes, enriching the curry with textures and complementary flavors. Simmer for approximately 5 to 7 minutes until the tomatoes become tender, and the potatoes show a light browning

Add water at intervals whenever you feel necessary.

Add coconut milk gradually to the simmering mixture gently for 15-20 minutes, crafting a velvety base that embodies the essence of the dish's richness.

Enhance the taste spectrum by incorporating a hint of sour cream, providing a delightful tanginess that harmonizes with the other ingredients, resulting in a tantalizing amalgamation of tastes. Simmer for an additional 5 minutes.
