Blueberry Coconut Pancakes!

Breakfast has never been so sweet!

Hello my little lovelies!

So for this recipe to be honest it was a total experiment. I was just feeling creative in my kitchen and this was born. Mainly because I'm really not much of a breakfast person and once it comes to breakfast I normally just throw whatever into a pan with some eggs and call it breakfast. It turned to be delicious and will definitely be going into my arsenal of recipes. This filled me up pretty much until dinner so if you need a meal where you're going to be busy all day and know that you probably won't be eating lunch this is perfect! Now I used coconut ice cream protein powder from 1Up to help make these more filling. If you don't have that it's okay since there will be coconut flakes in the recipe but if that's not enough you can use a little bit of coconut extract. Or instead of milk you can use coconut milk if you're lactose intolerant. That will definitely give you that coconut flavor. Without the milk, eggs and protein powder this recipe can easily be made vegan with a few substitutes.

Now because this is a carb heavy meal and if you want to add some protein to this meal may I suggest some eggs, bacon or sausage. If you want to keep this vegetarian, I would go with just the eggs. Or if you have Morning Star you can use their breakfast sausage patties or something to add more protein.

Here is the recipe!

For this recipe you will need:

- 1 cup of flour

- 1/2 cup of coconut ice cream protein powder (alternatives listed above)

- 1 1/2 teaspoon of baking powder

- 2 eggs

- 1/3 cup of coconut flakes

- 1/8 cup of sugar (or 1/3 cup if you're not using the coconut ice cream protein powder)

- 2 eggs

- 1 1/4 cup of milk (adjust as needed)

- a pinch of salt

- blueberries

-capful of vanilla extract

1. Combine all of the ingredients into mixing bowl except for blueberries.

2. Heat up a pan over medium low heat and melt a little bit of butter. (I like crispy edges, what can I say?)

3. Now here you will have two choices. You can do 1/2 cup which will give you 3 big pancakes or do 1/4 which will give you 6 normal pancakes.

4. Pour the amount of batter you chose into the pan. Put the blueberries in the pancake (as many as you'd like) and cover them up with more batter. When the top is mostly bubbled up flip it over and wait for the other side to cook.

5. Repeat the last step until you run out of batter. Eat with syrup or just eat them plain. Trust me they are sweet enough without syrup. Or if you want to get a little fancy use both syrup and confectioner's sugar. But like I said these pancakes are sweet enough by themselves.

If you want to do just a standard pancake recipe and just top it with blueberries and coconut flakes, just combine all of the ingredients except for the coconut flakes, blueberries and the coconut ice cream protein powder. You can also do different flavor combinations if you don't want to use the combo in this recipe. Another good one is blueberry lemon, blueberry and white chocolate, etc. The possibilities are endless! Just remember if you put too many ingredients in the batter they may come out really dense and not very fluffy!
