Classic Meatballs with a kick

Hello my little lovelies!

Today I have a recipe for you that is going to knock your socks off! I was craving spaghetti and meatballs for some reason or other and so I decided to research what makes a good meatball and I came up with my own recipe that it turned pretty good. They were a hit with my roommate and so I decided that this was a recipe worth posting!

Now for those of you with a very low spice tolerance like me these meatballs just have enough spice to give these a good flavor and kick without killing you. You can also make these without the spice if you just really don't like spice or if you can't eat spice. If you don't want to do just beef, you can do half beef and half sausage or half beef and half pork, it's really up to you. But for this recipe I just used ground beef because that was all I had at the time.

This recipe makes 31 meatballs so depending on how many you're feeding you can have leftover meatballs and I'll give instructions on those as well.

For this recipe you will need:

- 2 1/2 pounds of ground beef

- 1/2 cup of breadcrumbs

- 1/2 cup of grated parmesan cheese

- 1 tsp. of Italian seasoning

- 1/2 tbsp. of red pepper flakes (leave out if you don't want spicy)

- 1 1/2 tbsp. of parsley

- 1 tbsp. of garlic powder

- 1 tbsp. of onion powder

- salt and pepper

- 2 eggs

1. Combine all the ingredients in a bowl and mix together but be careful not to overmix or else the meat will become tough and you won't get that tender consistency you want for meatballs.

2. Roll each meatball into the size of a golf ball and place on a plate. You can make them smaller if you want.

3. In a large sauce pan, heat up a little bit of oil. Brown all of your meatballs. It's okay if they're still a little pink because you'll finish them off in the sauce or in the oven.

4. Add either a little bit of water or a little bit more olive oil and scrape up the yummy bits at the bottom.

5. From here you have two choices, You can either use a jarred sauce or you can make your own sauce.

6. Once your sauce is heated through add however many meatballs you want. If you have some leftover, heat up the oven to 350 degrees. Line up the leftover meatballs on a baking sheet and put them in the oven for about 20 minutes.

*If you don't want your sauce spicy because they will soak up some of the spice from the meatballs, put all of your meatballs on the baking sheet and bake them in the oven. Then just add the meatballs on top of your pasta and sauce.

7. Let the meatballs simmer in the sauce about 30-45 minutes and then serve over spaghetti noodles.

*For leftover meatballs: after they have fully cooked in the oven let them cool completely. The put them in a Ziploc bag and put them in the freezer. If you want to reheat them you have two options. You can either simmer them in a sauce or you can microwave them for about 2 minutes, maybe a little longer.
