Ingredients:

  • 1 pound dried black beans
  • 1 pound pork shoulder, cut into 1-inch pieces
  • 1/2 pound carne seca (dried beef), cut into 1-inch pieces
  • 1/2 pound linguiça (smoked sausage), sliced
  • 1/2 pound bacon, chopped
  • 1 large onion, chopped
  • 6 cloves garlic, minced
  • 2 bay leaves
  • 1 tablespoon cumin
  • 1 tablespoon smoked paprika
  • Salt and pepper to taste
  • Water

Instructions:

  1. Rinse the black beans and soak them in cold water for at least 8 hours or overnight.
  2. In a large pot, brown the pork shoulder over medium-high heat until it is well-seared on all sides. Remove the pork from the pot and set aside.
  3. Add the chopped bacon to the pot and cook until crispy. Remove the bacon from the pot and set aside.
  4. Add the chopped onion to the pot and sauté until it is soft and translucent. Add the minced garlic and cook for an additional 30 seconds.
  5. Add the soaked black beans to the pot and enough water to cover them by about an inch. Add the bay leaves, cumin, smoked paprika, and salt and pepper to taste.
  6. Bring the pot to a boil, then reduce the heat to low and let the feijoada simmer for about 1 hour.
  7. Add the carne seca, linguiça, pork shoulder, and crispy bacon to the pot. Add more water if necessary to keep the ingredients covered.
  8. Simmer the feijoada for another 1-2 hours or until the beans are tender and the meats are cooked.
  9. Serve the feijoada hot with rice, orange slices, and farofa.

Tips:

  • Feijoada is often made in large quantities and can be stored in the refrigerator or freezer for later use.
  • Some people like to add other meats, such as beef ribs, pig's feet, or smoked ham hocks, to their feijoada.

    Okay so I love feijoada! We make it with cilantro instead of Bay leaves though! 😊
