The veggie burger is a staple on many vegetarian and vegan menus. It's also gaining some ground as an appetizer or main dish for those looking to replace meat with plants in their diet.

Veggie burgers can be made of beans, vegetables, grains and even nuts . They come together easily and, once the ingredients are prepped and mixed, can be cooked up in a variety of ways to suit any palate.

Here are five delicious veggie burger recipes to give you an idea of how versatile these vegan favorites can be through the magic of your own hands.

Five Delicious Veggie Burger Recipes:

1. Black Bean Quinoa Burgers with Preserved Lemon Yogurt Sauce

For the burgers:

1/2 cup quinoa, cooked according to package instructions (makes ~2 cups cooked) 1 can black beans, drained and rinsed 2 tbsp onion, finely diced 1 clove garlic, finely minced 1 tbsp fresh parsley, minced Juice of 1/2 lemon 2 tbsp tahini 1/8 tsp ground nutmeg Salt and pepper to taste

For the sauce:

1/2 cup 0% Greek yogurt (may sub vegan mayo) Preserved lemon, to taste (below) Ground cumin, to taste Olive oil for cooking burgers

Directions:

Begin by sautéing onion in a pan with olive oil on medium heat until translucent, about 5 minutes. Add garlic and cook another minute. Next add black beans, quinoa, parsley, lemon juice salt and pepper to onions and garlic. Cook for 1-2 minutes then remove from heat.

In a separate bowl, add tahini and nutmeg to Greek yogurt. Stir until well combined. Add ground cumin and salt to taste.

Combine bean mixture with yogurt sauce in a large bowl then form into patties.

Coat a pan with olive oil on medium heat then cook burgers for 3 minutes per side or until golden brown and crisp.

Top burger with preserved lemon yogurt sauce and serve.

2. Rutabaga and Lentil Burgers with Spicy Sriracha Mayo

For the burgers:

2 cups rutabagas,chopped into small cubes 1/2 cup French green lentils, rinsed 2 cups water or vegetable broth bunch of fresh parsley (1/4 - 1/3 cup) 1 large shallot, diced juice of 1 lemon 3 garlic cloves, minced 2 tbsp ground flaxseed salt and pepper to taste

For the spicy sriracha mayo:

1/2 cup vegan mayonnaise 2 tbsp sriracha hot sauce

Directions

Add rutabagas and lentils to a pot of salted water, bring to boil and cook until soft, about 30 minutes. Pour off excess water. Add parsley, shallot, lemon juice, garlic cloves, and flaxseed to cooked rutabagas and lentils. Mix well then form into patties.

Coat a pan with olive oil on medium heat then cook burgers for 3 minutes per side or until golden brown and crisp.

To make spicy sriracha mayo, mix ingredients in a bowl.

3. Sweet Potato and Quinoa veggie burgers

2 cups cooked sweet potatoes 1 cup uncooked quinoa 2 tbsp fresh parsley, chopped 3 garlic cloves, minced 2 tsp paprika or smoked paprika 1/4 tsp cayenne pepper (optional) salt and pepper to taste

Directions:

Cook quinoa according to package instructions. Once cooked, mix in sweet potatoes and all other ingredients listed above. Form into patties and cook as desired (I like to sauté them). This recipe makes about 6 burgers.

4. Eggplant Burgers

1 large eggplant, peeled and cubed (about 4 cups) 1/2 cup Italian seasoned breadcrumbs or panko 2 garlic cloves, crushed 1/4 tsp red pepper flakes (optional) salt, and pepper to taste

Directions:

Preheat oven to 425 degrees. Place eggplant on a parchment-lined baking sheet and bake until soft, about 25 minutes total. Add all ingredients to a food processor and pulse until well combined but not completely smooth (there should still be some chunks). Form into patties and cook as desired. This recipe makes about 4 burgers.

5. Chickpea-Quinoa Veggie Burgers

1 can chickpeas, drained and rinsed 1/2 cup quinoa, cooked according to package instructions (makes ~2 cups cooked) 1 small shallot, diced Juice of 1/2 lemon 2 garlic cloves, minced 2 tbsp ground flaxseed Salt and pepper to taste

Directions:

Begin by sautéing shallot in a pan with olive oil on medium heat until translucent, about 5 minutes.

Add garlic and cook another minute. Next add chickpeas, quinoa, parsley, lemon juice salt, and pepper to shallots and garlic.

Mix well then form into patties. Coat a pan with olive oil on medium heat then cook burgers for 3 minutes per side or until golden brown and crisp.
